| Pennsylvania Dutch Cookie-Pies 1-1/2 c sugar1/4 c shortening1/2 c cocoa1 egg1 tsp vanilla2 c sifted flour1/2 tsp cream of tartar1/2 tsp baking soda1 tsp salt3/4 c buttermilkFluffy Refrigerator filling (recipe follows) Cream together sugar and shortening until light and fluffyBeat in cocoa and eggAdd vanillaSift together flour, cream of tartar, baking soda and saltAdd alternately with buttermilk to creamed mixtureMix wellDrop by teaspoonfuls on greased baking sheetBake at 375 for 10 to 12 minutesSpread flat sides (bottoms) of cooled cookies with fluffy refrigerator filling and put together in pairsIf you like you can sprinkle filling with flaked coconut before putting togetherMakes 26 cookie-pies Fluffy Refrigerator Filling:2-1/2 tbsp flour in a 1- quart saucepan.Measure 1/2 c milk.
