| Chocolate Meringue Stars 3 egg whites3/4 tsp vanilla extract3/4 cup sugar1/4 cup baking cocoa Glaze3 squares (1oz each) semisweet chocolate1 tbsp shortening In a mixing bowl, beat egg whites and vanilla until soft peaks formGradually add sugar, about 2 tbsp at a time, beating until stiff peaks formGently fold in cocoa Place in a pastry bag with a large open star tip (#8b)Line baking sheets with ungreased parchment paper, or drop by rounded tspsBake at 300F for 30 to 35 minutes or until lightly brownedRemove from parchment paper, cool on wire racksIn microwave or heavy saucepan, melt chocolate and shortening, stir until smoothDip the cookies halfway into glaze, place on waxed pape to setYield about 4 dozen | |
