| Chocolate Potato Cookies (Moist cookies good keepers) 1/2 c shortening1 c brown sugar, firmly packed1 egg1 tsp vanilla2 sq. unsweetened chocolate, melted1/2 c unseasoned mashed potatoes (room Temperature)1-1/2 c sifted flour1/2 tsp salt1/2 tsp baking soda3/4 c buttermilk1/2 c chopped walnuts or pecans Cream together shortening and brown sugar until light and fluffyBeat in egg and vanilla to mix wellAdd chocolate and mashed potatoes and beat until smoothSift together flour, salt and baking sodaAdd alternately with buttermilk to creamed mixtureStir until smooth, and then add nutsDrop by teaspoonfuls on greased baking sheetBake in 400 F for 10 minutes or until cookies, when touched with finger, spring back (do not over-bakeLet remain on baking sheet a minute or two before removing to racks for coolingOptional Spread with Chocolate FrostingMakes 4-1/2 dozen | |
