| Clothespin Cookies 3-1/4 c sifted flour1 tsp salt2 tbsp sugar2 c shortening1-1/4 c warm water2 egg yolksChocolate/Marshmallow Filling (recipe Follows) Blend together flour, salt, sugar and 1/2 c shortening as for pie crustStir in warm waterThen add egg yolks and mix wellCover bowl and chill 1 hourRemove dough from refrigerator and roll in rectangle 1/4" thickSpread with 1/2 c shorteningFold one half of dough (greased top)Over on other halfRefrigerate another hourRepeat this process two more times, each time spreading 1/2 c shortening on doughRoll a fourth of dough at a time, leaving remaining dough in refrigerator until ready to work with itCut in strips 1" wide, 4" longWind each strip loosely around a clean wooden clothespinLay in ungreased jelly roll panBake in hot oven 425F for 10 to 12 minutesPlace clothespins with cookies on cooling racksIn 2 or 3 minutes, gently twist pins and slip off cookiesThey are crisp and break easily so work carefullyWhen cool, fill with Chocolate/Marshmallow FillingTo fill, cut a small hole in corner of small plastic bag Partly fill with filling, Leaving remaining filling in refrigerator until neededSqueeze out filling, first into one end of cookie and then in other end to fill completelyMakes 9 dozen Chocolate/Marshmallow Filling1/4 c flour1 c milk1/2 c butter1/2 c sugar1/2 c confectioners sugar1/2 c marshmallow crème1 tsp vanilla2 to 4 squares unsweetened chocolate, melted and cooled Mix flour with a little milk to make a smooth paste, add remaining milk and cook, stirring constantly, until mixture thickensSet a side to coolCream together butter and sugars until light and fluffy, using mixer on high speedAdd thickened flour-milk mixture and beat wellThen beat in the marshmallow crème and vanillaStir in chocolateCover and chill before usingMakes 2 cups | |
