| Butterballs Vanilla Sugar1/2 vanilla bean1 cup sugar Cookies1 cup unsalted butter, softened1/2 cup sugar1-3/4 cups all purpose flour1/2 cup raspberry jam or chocolate ganache Vanilla sugar Split vanilla bean, scrape out seeds. In a small bowl, whisk vanilla bean, seeds, and sugarCover and let stand overnight Cookies In a large bowl, beat with mixer butter until creamy, about 3 minutesBeat in sugar until light and fluffyBeat in flour just until blendedShape dough into a diskWrap in plastic wrap and refrigerate until firm at least 3 hours or overnightShape dough into 3/4 inch balls place on a large rimmed baking sheet and freeze 30 minutesMeanwhile, preheat oven to 375FLine 2 large cookies sheets with parchment paperPlace balls on prepared sheets,1 inch apartBake 10 to 12 minutes, or just until firmCool completely on pans on wire racksSpread flat side of half of cookie with jam or Chocolate GanacheTop with remaining cookies to form SandwichesRoll cookies in Vanilla Sugar to coat Chocolate GanachePut 3 oz semisweet chocolate, chopped in a bowl in a sauce pan heat 1/3 cup heavy cream over medium-high heat just until small bubbles appear around edge of panPour cream over chocolate whisk until smoothCool at least 20 minutesWhisking occasionally, or until thickened | |
