ButterScotch Stacks

Using the below recipe

Mix dough as directed and divide into four equal portions

Roll or pat out each portion into an 8" circle between 2 pieces of waxed paper (draw an 8" circle on counter top for a guide)

Chill circles in refrigerator until top piece of paper can be peeled off easily transfer circles on waxed paper to lightly greased baking sheets

Bake in slow oven 325F about 20 minutes.

You may bake 2 at a time by using both oven shelves be sure to exchange top and bottom baking sheets after 10 minutes in the oven for even browning

Remove from baking sheet and cool on rack

When cool, peel off paper

Stack circles, spreading each with filling of whipped cream of scoops of softened ice cream

Freeze

To serve, let stand at room temperature about 15 minutes

Cut into wedges

Makes 10 to 12 servings
