| Almond Raspberry Stars 3/4 cup butter, softened1/2 cup confectioner’s sugar1 tsp vanilla extract1/2 tsp almond extract1-3/4 cups plus 2 tbsp all purpose flour2 tbsp finely chopped almonds1 tbsp sugar1/2 tsp ground cinnamon1 egg white, light beaten1/3 cup raspberry jam In a mixing bowl, cream butter and confectioners sugar until light and fluffyAdd extracts and beat until well mixedStir in flourShape into a ball cover and refrigerate for 15 minutesOn a lightly floured surface, roll dough to a 1/4 inch thicknessCut into about 72 stars, half 2-12 inches and Half 1-1/2 inchesCombine almonds, sugar and cinnamonBrush small stars with egg white and immediately sprinkle with cinnamon/sugar mixtureLeave large stars plain Bake on ungreased baking sheets at 350 for 10 minutes (small stars) to 12 minutesLarge stars or until the tips just begin to brown Cool on wire racksTo assemble, spread enough jam over large star to cover the centerTop with a small starPress lightlyJam should show around edge of small starLet jam set before storingYield about 3 dozen | |
