1/2 c shortening1/2 c smooth peanut butter1/2 c sugar1/2 c brown sugar, firmly packed1 egg1/2 tsp vanilla1/2 c grated peeled apple1-1/2 c sifted flour1/2 tsp baking soda1/2 tsp salt1/2 tsp ground cinnamon Cream together shortening, peanut butter and sugars until light and fluffyBeat in egg, vanilla and apple to mix wellSift together remaining dry ingredientsStir into creamed mixture to blend wellChill several hoursWork with a 4th of dough at a time, leaving remaining dough in refrigerator until ready to useShape in balls place on greased baking sheetFlatten balls with a fork moistened in cold waterBake 350 for 12 to 15 minutesMakes about 5 dozen | |
