| St Joseph's Day Cream Puffs Bring to a boil1 cup hot water1/2 cup butter1 tbsp sugar1/2 tsp salt Add all at once1 cup sifted flour Beat vigorously with a wooden spoon until mixture leaves sides of pan and forms a smooth ball about 3 minutesRemove from heat Quickly beat in, one at a time, beating until smooth after each addition4 eggs Continue beating until mixture is smooth and glossyAdd mixing thoroughly1 tsp grated orange peel1 tsp grated lemon peel Drop by tbsp on baking sheetBake at 450F for 15 minutes Lower heat to 350 for 15 to 20 minutesOr until golden in color Remove from rackCool completelyCut a slit inside of each puff and fill with Ricotta Filling 3 cups Ricotta cheese1/4 cup flour2 tbsp grated orange peel2 tbsp grated lemon peel1 tbsp vanilla extract1/8 tsp salt Beat until foamy4 eggs Add gradually, beating until eggs are thick and piled softly1 cup sugar Stir beaten eggs into Ricotta mixture until well blended and smooth | |
