St Joseph's Day Cream Puffs




Bring to a boil

1 cup hot water

1/2 cup butter

1 tbsp sugar

1/2 tsp salt



Add all at once

1 cup sifted flour



Beat vigorously with a wooden spoon until mixture leaves sides of pan and forms a smooth ball about 3 minutes

Remove from heat



Quickly beat in, one at a time, beating until smooth after each addition

4 eggs



Continue beating until mixture is smooth and glossy

Add mixing thoroughly

1 tsp grated orange peel

1 tsp grated lemon peel



Drop by tbsp on baking sheet

Bake at 450F for 15 minutes

Lower heat to 350 for 15 to 20 minutes

Or until golden in color



Remove from rack

Cool completely

Cut a slit inside of each puff and fill with



Ricotta Filling



3 cups Ricotta cheese

1/4 cup flour

2 tbsp grated orange peel

2 tbsp grated lemon peel

1 tbsp vanilla extract

1/8 tsp salt



Beat until foamy

4 eggs



Add gradually, beating until eggs are thick and piled softly

1 cup sugar



Stir beaten eggs into Ricotta mixture until well blended and smooth
