| Pear Pie with Streusel Topping 9 inch Pastry Shell (with 1/2 cup chopped fine Almonds, Sprinkled along the bottom) Filling 1/4 cup granulated sugar1/4 tsp ginger4 tsp flour5 ripe Bartlett Pears (2lbs)\4 tsp lemon juice1/4 cup light corn syrup Streusel Topping 2/3 cup sifted all purpose flour1/3 cup light brown sugar, firmly packed1/3 cup butter or margarine Make Streusel ToppingIn small bowl, combine flour and sugarCut in butter, with pastry blender or 2 knives, until mixture is like coarse cornmealRefrigerate until ready to use Preheat oven to 375 Make FillingCombine sugar, ginger, and flour, sprinkle about a third of mixture over bottom of pie shellPeel and core pears, slice thinly into bowlArrange half of the pears in shell, top with a third of sugar mixtureArrange remaining pears top with remaining sugar mixtureDrizzle with lemon juice and corn syrup over topCover with Streusel ToppingBake 40 to 45 minutes, or until pears are tenderMakes 6 servings | |
