Lemon Fluff Pie




6 egg yolks

1 cup sugar

4-1/2 tbsp lemon juice

Grated rind of 1/2 lemon

1/8 tsp salt

3 egg whites

1 baked pastry shell

Beat egg yolks until thick add sugar, lemon juice, rind and salt

Mix well and cook in top of double boiler until mixture coats a spoon

Cool

Beat egg whites until stiff and fold into lemon mixture

Pour into pastry shell, cover with meringue and bake 15 minutes to set meringue

Makes one pie
