Yuletide Eggnog Pie


1/4 cup granulated sugar

1/2 tsp salt

2 egg yolks slightly beaten

1-1/2 cups warm eggnog

2 tsp plain gelatin combined with 1/4 cup cold water stirred and allowed to stand until thick

1 tsp vanilla or brandy

2 tbsp green maraschino cherries well drained, dried on a towel, sliced into rings

2 tbsp red maraschino cherries well drained, dried on a towel, sliced into rings

2 tbsp pecan meats broken in large pieces

3/4 cup whipping cream beaten until it just clings to bowl, and refrigerated

2 large egg whites beaten until they just cling to bowl, then combined with 2 tablespoons granulated sugar, beaten only until blended, and refrigerate



Mix first 6 ingredients. In a sauce pan and cook for at a simmer for 10 to 15 minutes.

Pour into a cold baked pie shell, spread smoothly, and refrigerate at least 4 hours

Shortly before serving, whip 1 cup cream until stiff and with bag pipe a collar around inside edge of pie to simulate a Christmas Wreath Cut 6 to 8 red maraschino cherries into halves or leave whole and place them on border about 1 inch apart

Garnish each cherry with green citron leaves or green maraschino cherries may be cut lengthwise into 6 sections and used for leaves

Cherries and leaves may be omitted and shredded sweet chocolate may be sprinkled over top.
