Eggnog Bread


Eggnog Bread
2 eggs
1 cup dairy eggnog
2 teaspoons rum extract
1 cup sugar
1 teaspoon vanilla
1/4 teaspoon nutmeg
2 1/4 cups all-purpose flour
1/2 teaspoon salt
1/2 cup butter or margarine
2 teaspoons baking powder

Beat eggs in large bowl. Add sugar, eggnog, butter, rum and vanilla extract; blend well. Add flour, baking powder, salt and nutmeg, stirring just until dry ingredients are moistened. Grease bottom of pan only. Pour batter into pan. Bake at 350 degrees for 40 mins to 1 hour or until cake tester comes out clean. Cool 10 minutes. Remove from pan. Cool completely. Wrap tightly and store in refrigerator.

EggNog Bread




1/4 cup butter, melted

3/4 cup sugar

2 eggs

2-1/4 cups all purpose flour

2 tsp baking powder

1 tsp salt

1 cup eggnog

1/2 cup chopped pecans

1/2 cup raisins

1/2 cup chopped red and green candied cherries



In a large bowl, combine butter, sugar and eggs, mix well

Combine the flour, baking powder and salt

Stir into butter mixture alternately with eggnog just until moistened

Fold in pecans, raisins and cherries

Spoon into a greased 8-1/2 x 4-1/2x 2-1/2 loaf pan

Bake at 350 for 70 minutes or until a toothpick comes out clean

Yield 1 loaf



Recipe was made with commercially made eggnog
