Rice Torta




2 cups rice

4 cups water

1-1/2 to 2 tsp salt or herb salt

2 eggs

1-1/4 cups parmesan cheese



Olive oil

Fresh herbs, for garnish



Rinse rice well



In a saucepan, bring water to a boil. Add salt and rice

Cook, covered, until rice is almost done, just until water is absorbed. Follow pkg directions



Let rice cool in large bowl



Add eggs and mix well



Brush bottom of a 9 x 11 inch baking pan with olive oil

Spread rice mixture evenly in pan to 1/2 inch thickness



Bake at 350 for 40 to 45 minutes until edges are browned



Cut into squares

Garnish with sprigs of fresh herbs



Calories 163 per serving
