Colombo Pork





2 tbsp brown sugar

3 tsp curry powder

1 tsp cumin

½ tsp salt

1/8 tsp pepper

1 (4lb) boneless pork lion roast

2 large onions, each cut into 6 wedges

2 tbsp oil

Heat oven to 350

In small bowl, combine brown sugar, curry powder, cumin, salt and pepper

Mix well

Rub mixture over all sides of pork roast

Place roast in shallow roasting pan

In medium bowl, combine onions and oil

Toss to coat

Place onions around roast

Bake at 350 for 1 ¾ to 2 hours or until pork is no longer pink in center and thermometer inserted in center registers 155

Cover, let stand 15 minutes before slicing
