Custard Corn Bread



3/4 cup yellow corn meal

1/2 cup sifted enriched flour

2 tablespoons sugar

1/2 teaspoon salt

1 teaspoon baking powder

1 beaten egg

1 cup milk

2 tablespoons melted butter

1/2 cup milk



Mix and sift corn meal, flour, sugar, salt, and baking powder.

Combine egg, 1 cup milk, and butter

Add to dry ingredients and mix well

The batter is very thin

Pour batter in greased pan 8x8x2 inches

Pour 1/2 cup milk carefully over top of batter

Bake in hot oven 400F 20 minutes

Then cut in squares and serve hot with chicken, turkey, or pork.
