Cream Sauce




2 cups Bechamel Sauce (below)

1 cup top milk or cream

1/2 tbsp lemon juice



Cook Bechamel Sauce until reduced to about 1 cup

Add milk or cream and lemon juice

Cook, stirring constantly, until ready to boil; remove from heat

Makes about 3 cups
