Clothespin Cookies




3-1/4 c sifted flour

1 tsp salt

2 tbsp sugar

2 c shortening

1-1/4 c warm water

2 egg yolks

Chocolate/Marshmallow Filling (recipe Follows)



Blend together flour, salt, sugar and 1/2 c shortening as for pie crust

Stir in warm water

Then add egg yolks and mix well

Cover bowl and chill 1 hour

Remove dough from refrigerator and roll in rectangle 1/4" thick

Spread with 1/2 c shortening

Fold one half of dough (greased top)

Over on other half

Refrigerate another hour

Repeat this process two more times, each time spreading 1/2 c shortening on dough

Roll a fourth of dough at a time, leaving remaining dough in refrigerator until ready to work with it

Cut in strips 1" wide, 4" long

Wind each strip loosely around a clean wooden clothespin

Lay in ungreased jelly roll pan

Bake in hot oven 425F for 10 to 12 minutes

Place clothespins with cookies on cooling racks

In 2 or 3 minutes, gently twist pins and slip off cookies

They are crisp and break easily so work carefully

When cool, fill with Chocolate/Marshmallow Filling

To fill, cut a small hole in corner of small plastic bag Partly fill with filling, Leaving remaining filling in refrigerator until needed

Squeeze out filling, first into one end of cookie and then in other end to fill completely

Makes 9 dozen



Chocolate/Marshmallow Filling

1/4 c flour

1 c milk

1/2 c butter

1/2 c sugar

1/2 c confectioners sugar

1/2 c marshmallow crème

1 tsp vanilla

2 to 4 squares unsweetened chocolate, melted and cooled



Mix flour with a little milk to make a smooth paste, add remaining milk and cook, stirring constantly, until mixture thickens

Set a side to cool

Cream together butter and sugars until light and fluffy, using mixer on high speed

Add thickened flour-milk mixture and beat well

Then beat in the marshmallow crème and vanilla

Stir in chocolate

Cover and chill before using

Makes 2 cups
