Red Beet Eggs Salad
(Pennsylvania Dutch)




2 cans (1 lb size) small whole beets

1 cup cider vinegar

1/2 cup sugar

1 tsp salt

6 hard cooked eggs, shelled

Salad greens



Drain beets, reserving liquid

Place beets in quart jar



Measure reserved liquid

If necessary, add enough water to measure 1 cup



In small saucepan, combine beat liquid, vinegar; sugar and salt bring to boiling, stirring

Pour over beats, then refrigerate, tightly covered 24 hours



Next day remove beets

Put eggs in jar,

Refrigerate, covered 24 hours

Also refrigerate beets, covered



To serve

Drain eggs, halve lengthwise

Slice beets

Arrange eggs on the salad greens, along with the sliced beetsMakes 6 servings

Strawberry Surprise Salad



1 (6oz) pkg strawberry gelatin

2 cups boiling water

1 (10oz) pkg frozen strawberries halved

2 large bananas mashed

4 oz chopped pecans

1/2 pint sour cream

Head of Lettuce



Dissolve gelatin in boiling water set aside to cool

Add berries, bananas and pecans

Pour half of mixture into a 9x13 inch pan and put in refrigerator to congeal

Spread sour cream over congealed gelatin

Pour other half of gelatin mixture over sour cream

Return to refrigerator until fully congealed

Cut and serve on lettuce leaves

Serves 12 to 15



It looks really cool like marble when it’s done.

Snowman Salad




Fill 2 halves of large pears with cream cheese and nuts

Put together and spread cream cheese over all

Sprinkle with moist coconut

Place on cup shaped lettuce leaf

Make head with whole marshmallow

Holding down with toothpick

Place on pear

Paint features with skewer dipped into red coloring

Cut small rounds of pimento and green pepper for cap

Holding on head with small pieces of toothpickDip skewer into red coloring and paint buttons

Santa Claus Salad




Place half a canned pear with cut side down on lettuce

Make up brows, nose and mouth of small pieces of cherry

Use mayonnaise for the cap and make a tassel of a red cherry

Using a pastry tube, put whipped cream on for hair and beard.

Watergate Salad



2 pkg (4 serving size each) Jell-o Pistachio Flavor instant pudding and pie filling

2 Cans (20 oz each) crushed pineapple in juice, undrained

2 Cups Jet-Puffed Miniature Marshmallows

1 Cup chopped Planters Pecans

3 Cups (8 oz tub) thawed Cool Whip Whipped Topping



Mix dry pudding mix, pineapple, marshmallows and pecans in a large bowl until well blended.

Gently stir in whipped topping

Cover

Refrigerate 1 hour or until ready to serve

Garnish with additional cool whip topping and chopped Pecans

Waldorf Salad




Dressing

2 tsp lemon juice

3/4 cup mayonnaise

1/2 cup whipping cream

2 tart apples

5 stalks celery

1/4 cup walnuts

10 to 15 grapes



Stir lemon juice into mayonnaise

Whip cream

Add mayonnaise to cream



Peel apples

Dice finely

Rinse celery

Trim

Cut into very thin strips



Save a few walnuts for garnish

Chop remaining

Add apples, celery and nuts to mayonnaise



Garnish salad with halved grapes and walnuts
