| Red Beet Eggs Salad (Pennsylvania Dutch) 2 cans (1 lb size) small whole beets1 cup cider vinegar1/2 cup sugar1 tsp salt6 hard cooked eggs, shelledSalad greens Drain beets, reserving liquidPlace beets in quart jar Measure reserved liquidIf necessary, add enough water to measure 1 cup In small saucepan, combine beat liquid, vinegar; sugar and salt bring to boiling, stirringPour over beats, then refrigerate, tightly covered 24 hours Next day remove beetsPut eggs in jar,Refrigerate, covered 24 hoursAlso refrigerate beets, covered To serveDrain eggs, halve lengthwiseSlice beetsArrange eggs on the salad greens, along with the sliced beetsMakes 6 servings | |

| Strawberry Surprise Salad
1 (6oz) pkg strawberry gelatin
2 cups boiling water
1 (10oz) pkg frozen strawberries halved
2 large bananas mashed
4 oz chopped pecans
1/2 pint sour cream
Head of Lettuce
Dissolve gelatin in boiling water set aside to cool
Add berries, bananas and pecans
Pour half of mixture into a 9x13 inch pan and put in refrigerator to congeal
Spread sour cream over congealed gelatin
Pour other half of gelatin mixture over sour cream
Return to refrigerator until fully congealed
Cut and serve on lettuce leaves
Serves 12 to 15
It looks really cool like marble when it’s done. | |

| Watergate Salad
2 pkg (4 serving size each) Jell-o Pistachio Flavor instant pudding and pie filling
2 Cans (20 oz each) crushed pineapple in juice, undrained
2 Cups Jet-Puffed Miniature Marshmallows
1 Cup chopped Planters Pecans
3 Cups (8 oz tub) thawed Cool Whip Whipped Topping
Mix dry pudding mix, pineapple, marshmallows and pecans in a large bowl until well blended.
Gently stir in whipped topping
Cover
Refrigerate 1 hour or until ready to serve
Garnish with additional cool whip topping and chopped Pecans | |
