| Ham-Banana Casserole 1/4 cup melted butter or margarine2 tbsp all purpose flour1/2 tsp salt1 cup milk1/2 cup grated cheddar cheese6 slices boiled ham1 tsp prepared mustard6 medium banana's green tipped Preheat oven to 350FGrease a 12x8x2 inch baking dish In medium saucepan, blend 2 tbsp butter, flour, and salt Gradually blend in milk, cook, stirring over low heat, until thickened and smooth Add cheese, and stir until melted and blendedRemove from heat Spread ham slices with mustardPeel bananas, and roll each in a ham slice Place banana rolls, seam side down, in prepared baking dish Brush banana tips with remaining 2 tbsp butterTop with cheese sauce Bake 15 to 20 minutesMakes 6 servings | |

| Pineapple Mustard Glazed Ham 2 (20oz) cans pineapple slices packed in juice1 cup packed dark brown sugar1/3 cup Dijon mustard1/4 cup whole grain mustard1 spiral-sliced, bone in half ham (7 to 10 lbs) preferably shank end Drain pineapple, reserving 3/4 cup juiceWhisk juice, brown sugar, and mustards in bowl Remove ham from packaging and discard plastic disk that covers boneLine 13x9 inch baking dish with two 24 inch long pieces of foil Place ham cut side down in lined baking dish and brush liberally with glaze Using toothpicks, attach pineapple rings all over top and sides of ham (do not press toothpicks all the way into ham)Brush with more glaze and wrap tightly in foilLet stand at room temperature for 1-1/2 hours Adjust oven rack to lowest position and heat oven to 300 degrees Bake ham until center registers about 100 degrees on instant read thermometer, 2 to 3 hours, depending on weight of ham (17 minutes per pound) Remove ham from oven and roll back foil to expose hamIncrease oven temperature to 450 degrees Brush ham liberally with more glaze and return to oven until glaze becomes golden brown and sticky, 30 to 40 minutesRemove from oven, brush entire ham again with glaze, loosely cover with foil, and let rest for 30 to 40 minutes before carving, basting ham with juices once or twice,Serve | |

| Spiced Honey & Black Pepper Glazed Ham 1 (8-10 lb) fully cooked bone in ham2 tbsp cracked black pepper2 tbsp ground mustard seed2 tbsp garlic powder1/2 cup honey1-1/2 tsp ground Saigon cinnamon1/2 tsp ground cloves Preheat oven to 323F Score ham at 1 inch intervals with a sharp knife, place in baking dishIf ham appears dry, moisten surface with water.Combine black pepper, mustard and garlic powder in a small bowl.Rub pepper mixture over surface of hamRoast according to manufacture's directions Combine honey, cinnamon and cloves.Drizzle over ham during the last 30 minutes of roastingRemove ham from oven and let rest 20 minutes before slicing. | Brown Gravy for Ham
1/4 cup unsifted all purpose flour
1/4 cup dark brown sugar, firmly packed
1-1/2 cups cooking liquid from ham
In medium saucepan, over low heat brown flour, stirring constantly, until deep golden
Remove from heat
Stir in sugar
Gradually add ham liquid, stirring to make a smooth mixture
Bring to boiling, stirring constantly
Then stir into ham and apples
Makes about 1 cup | |
