How to Prepare Fish Broth



Make a large batch and freeze in small containers

It is not difficult to make fish broth, once it is on the stove it needs little attention



Makes 2 Quarts



3 lbs fish heads, bones, and trimmings

1 carrot

1 yellow or red onion

2 leeks

2 lemon slices

A few parsley stalks or dill

2 bay leaves

A few sprigs thyme or

1 tsp dried thyme

2 tsp salt

10 whole peppercorns

2 quarts water

2 cloves garlic, optional

You can also add 1 cup white wine



Rinse and trim the fish heads and bones

Place all ingredients in a large saucepan

Bring to a boil

Skim off residue

Simmer over medium low heat for about 30 minutes

Strain broth

Discard bones and vegetables

Reserve broth

To freeze broth, pack in containers with tight fitting lids

Let cool completely before freezing

Fish broth should never cook longer than 30 minutes
