Buttermilk-Pear Pancakes
Ingredients



  • 1 1/4 cups all-purpose flour
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/3 cups low-fat buttermilk
  • 2 tablespoons maple syrup
  • 1 tablespoon vegetable oil
  • 1 large egg, lightly beaten
  • 3/4 cup pear, peeled and finely chopped

Directions


1. Lightly spoon flour into dry measuring cups; level with a knife. Combine flour and next 4 ingredients (flour through salt) in a large bowl.


2. Combine buttermilk, syrup, oil, and egg; add to flour mixture, stirring until smooth. Fold in pear.


3. Spoon about 1/4 cup batter onto a hot nonstick griddle or a large nonstick skillet. Turn pancakes when tops are covered with bubbles and edges look cooked.

Pear Butter




4 lbs ripe pears, preferably Bartlett’s

Peeled cored and cut into 1 inch chunks



5 cups apple cider

2-1/2 cups light brown sugar

1-1/2 tsp cinnamon

1-1/2 tsp grated nutmeg

1/4 tsp powdered clove

2 tbsp vanilla extract (optional)



Bring cider to boil over high heat

Cook until reduced to 2-1/2 cups, or half

Add pear chunks and cook until fruit is soft and translucent, about 30 minutes

Transfer to a food processor

Puree until mixture is smooth

Wash original pan, or use another

Add fruit puree, brown sugar, spices, and stir to dissolve

Bring mix to a simmer, stirring frequently to avoid scorching

Cook until very thick, 30 minutes or more

Remove from heat, cool to room temperature

Add optional vanilla if using it (taste at this point, you may want to add it)

Put pear butter into clean sterilized canning jars, seal with canning lids and rings

Process according to jar manufacturer's directions or in a boiling water bath for 10 minutes.

Pear Jam




5 cups prepared fruit (about 3 1/2 pounds fully ripe pears)

2 tablespoons lemon juice

3 1/4 cups sugar

1 box Sure*Jell Light Fruit Pectin



Prepare fruit. Peel and core about 3 1/2 pounds pears. Chop very fine or grind. Measure 5 cups into 6 or 8 quart saucepan, add lemon juice.

Then make Jam. Mix 1/4 cup sugar with fruit pectin, and then stir into fruit in saucepan. Place over high heat and stir until mixture comes to a full boil. Immediately add remaining sugar and stir. Bring to a full rolling boil and boil hard 1 minute. Stirring constantly remove from heat and skim off foam with metal spoon. Ladle quickly into hot jars, filling to within 1/8 inch of top. Cover and process in boiling water bath for 10 minutes. Makes about 10 (8ounce) jars.

Pear Salsa



1 ½ cups chopped unpeeled pear (about 1 large pear)

2 tbsp chopped green onions

2 tbsp chopped fresh cilantro

2 tbsp chopped hot yellow chilies (about 1 medium)

2 tsp grated lemon peel

2 tbsp lemon juice

½ tsp salt

Mix all ingredients in small bowl. Cover and refrigerate 1 hour

One serving

Pear Parfaits




1/4 cup sugar

Dash of Salt

2 tbsp cornstarch

1 tbsp grated orange rind

1 cup orange juice

1 tbsp lemon juice

1 can (1lb) sliced pears, chilled

1 quart vanilla ice cream

Chocolate sprinkles

1/2 cup heavy cream, whipped and sweetened



Mix first 3 ingredients in saucepan

Add next 3 ingredients and 1/2 cup syrup drained from pears

Mix well; bring to boil and cook, stirring, until clear and thickened

Remove from heat, cool, then chill

To serve, put a scoop of ice cream in half pint glass

Add one sixth of pear slices and 1/4 cup orange sauce

Top with another scoop of ice cream, chocolate sprinkles and spoonfuls of whipped cream

Makes 6 servings

Note pkged whipped topping can be substituted for the whipped cream

Pear and Pork-Chop Casserole




4 large pork chops

Salt and pepper

4 medium pears

2 tbsp lemon juice

1/4 cup packed brown sugar



Brown chops on both sides and put in shallow baking dish

Sprinkle with salt and pepper

Peel, core and slice pears and put on chops

Mix remaining ingredients and sprinkle on pears

Cover with lid or foil and bake in moderate oven 375F for 20 minutes

Uncover and bake 25 to 30 minutes longer, basting several times with liquid in dish

Makes 4 servings

Pear Mocha Cream




1 can (1 pound, 13 oz)

1/4 cup sugar

1/4 tsp salt

3 tbsp cornstarch

3 cups milk

3 eggs

2 tbsp instant coffee

4 squares, semi sweet chocolate

1 cup miniature marshmallows

2 tbsp water

Shaved chocolate



Drain pears, reserving 1 cup syrup

Mix next 3 ingredients in saucepan

Add pear syrup and milk

Cook, stirring, until slightly thickened

Let bubble a few minutes

Beat eggs until frothy

Stir in small amount of pudding mixture

Add to mixture in saucepan and cook, stirring 2 to 3 minutes

Add coffee and chocolate and stir until chocolate is melted

Cool chill and put in serving dish

Heat marshmallows and water, stirring until blended

Put pears, cut side down on pudding

Pressing in gently

Put marshmallows sauce over top and sprinkle with shaved chocolate

Make 6 to 8 servings

French Pear Pudding




2 tbsp granulated sugar

Flour

1 cup dairy sour cream

1 egg, beaten

1 tsp vanilla extract

1 can (1 pound) sliced pears

1/4 cup packed brown sugar

1/2 tsp nutmeg

2 tbsp butter

Cream



Mix granulated sugar and 1 tbsp flour

Add to sour cream with egg and vanilla

Drain pears and arrange slices in shallow 1-1/2 quart baking dish

Pour sour cream mixture over pears

Bake in moderate oven 350F

For 15 minutes

Mix 1/3 cup flour, the brown sugar, nutmeg and butter until mixture resembles coarse meal

Sprinkle on first mixture

Bake 15 minutes longer

Serve warm or cool with cream

Serves 4

Double Cheese Pear Salad




1 cup cottage cheese

1/2 cup natural sharp cheddar cheese

2 tablespoon chopped green pepper

1/4 cup Miracle Whip Salad Dressing

6 Bartlett pear halves, drained

Lettuce



Combine cheese, green pepper and salad dressing, Mix lightly

Fill center of pears with mixture

Serve on lettuce

Garnish with grapes and mint, if desired

Fill 2 halves of large pears with cream cheese and nuts

Put together and spread cream cheese over all

Sprinkle with moist coconut

Place on cup shaped lettuce leaf

Make head with whole marshmallow

Holding down with toothpick

Place on pear

Paint features with skewer dipped into red coloring

Cut small rounds of pimento and green pepper for cap

Holding on head with small pieces of toothpick

Dip skewer into red coloring and paint buttons

Baked Fruit Casserole




1 can (16 oz) apricot halves, drained

1 can (16 oz) pear halves, drained

1 can (30 oz) whole plums, drained, halved and pitted

1 can (29 oz) peach halves, drained

1 can (8 oz) pineapple slices, undrained

1/3 cup packed brown sugar

1 tbsp butter

1/2 tsp ground cinnamon

1/4 tsp ground cloves



In a greased 13x9x2 inch pan, starting at a 9 inch end, arrange rows of fruit in the following order

Half of the apricots, pears and plums, all the peaches, then remaining apricots, pears and plums

Drain pineapple, reserving 1/2 cup of juice

Lay pineapple over fruit in pan



In a saucepan, combine the pineapple juice, brown sugar, butter, cinnamon and cloves

Cook and stir until sugar is dissolved and butter is melted

Pour over the fruit

Bake, uncovered at 350 for 20 to 25 minutes or until mixture is heated through

Yield 12 to 16 servings

Pear Walnut Cake




2 fresh USA Bartlett Pears, cored

1 cup packed brown sugar

1/2 cup shortening

1 egg

1 tsp vanilla

1 cup flour

1 cup Flax Seed Flour

1 tsp ground cinnamon

1 tsp ground nutmeg

1/2 tsp salt

1/2 tsp baking soda

1/2 cup milk

1/2 cup chopped Walnuts, or Pecans

Broiled Maple Topping



Finely chop pears to equal 1-1/2 cups

Cream sugar and shortening until light and fluffy

Add eggs and vanilla, beat until mixture is well blended

Combine flour, spices, salt and baking soda; add to mixture alternately with milk

Stir in chopped pears and nuts

Turn into greased 12x8x2 inch baking pan

Bake at 350 for 30 to 35 minutes or until wooden pick inserted near center comes out clean

Spread Broiled Maple Topping over warm cake

Broil 2 to 3 minutes

Watching carefully or until bubbly



Broiled Maple Topping



Melt 1/4 cup butter or margarine in small saucepan

Remove from heat

Stir in 1/2 cup packed brown sugar

2 tbsp milk

2 tbsp maple flavored syrup

1 cup flaked coconut

1/2 cup chopped nuts



Makes about 1-1/2 cups



Caramel Frosting



Melt 1/4 cup butter or margarine in small saucepan

Add 1/2 cup packed brown sugar

2 tbsp milk

Bring to a boil, cook and stir 1 minutes or until slightly thickened Cool

Beat in 1-2/3 cups sifted powdered sugar, until of spreading consistency

Makes about 1 cup

Champagne-Poached Pears




You can serve these in individual teacups for an elegant display



8 Bosc or Bartlett Pears

1 (about 3 cups) bottle champagne or sparkling wine

8 cups orange juice

1 (3 inch) cinnamon sticks

5 whole cloves

Garnishes - Orange and lemon rind strips



Peel and core pears, leaving stems intact.

Cut a thin slice from bottom of each pear, forming a base for pears to stand on



Place pears upright in a Dutch oven; pour champagne and orange juice over pears. Add Cinnamon stick and cloves

Bring to a boil, reduce heat, and simmer 15 minutes or until pears are tender.

Serve warm,

Garnish if desired.

3 tablespoons Miracle Whip Salad Dressing

Lettuce

Red Cinnamon Candies



Combine softened cream cheese and salad dressing, mixing until well blended.

Frost pears with mixture

Serve on lettuce

Garnish with candies

Crème De Menthe Pears




4 lbs fresh, ripe pears

3 cups sugar

2 lemon slices

1/2 cup green crème de menthe



Peel pears, leaving stems intact

In kettle, combine sugar, lemon slices, and 1 cup water

Over high heat, bring to boiling, stirring in dissolved sugar

Add whole pears, simmer, uncovered, 40 minutes, or until pears are tender

Caramel-Pear Dumplings




1 can (1 lb 13 oz) pear halves

2/3 cup sugar

Dash of salt

2 tbsp butter or margarine

1 tsp vanilla extract

Dumpling Batter, below

Plain or whipped cream



Drain pears, reserving syrup

Cook 1/3 cup sugar slowly in large skillet with oven proof handle, stirring, until golden brown syrup forms

Add remaining sugar, the salt, butter, and vanilla and pear syrup

Bring to boil and boil 2 minutes

Arrange pear halves, rounded side down, in skillet

Drop batter by tablespoonfuls onto pear halves

Bake in hot oven 425F about 15 minutes

Let stand a few minutes, and then turn out on hot serving plate

Serve with cream

Makes 8 servings



Dumpling Batter

2 cups cake flour

1/2 cup sugar

1-1/2 tsp baking powder

1/2 tsp salt

1 tbsp butter or margarine, melted

1/2 cup plus 2 tbsp milk



Sift dry ingredients into bowl

Add remaining ingredients and mix lightly and quickly just until dry ingredients are moistened

Note: if preferred, use 1-1/2 cups biscuit mix, omit flour, baking powder, salt and butter

Reduce sugar to 1/3 cup and use 6 tbsp milk, or enough to moisten.

Chocolate Pear Delight




1 tbsp butter

1 tbsp flour

1/2 cup milk

3 tbsp cocoa

2-1/2 tbsp sugar

2 egg yolks

1/4 tsp vanilla

2 egg whites

1 fresh Pear, peeled and sliced



Melt butter blend in flour

Heat milk, cocoa and sugar together until hot, but not boiling

Add all at once to flour mixture, stirring constantly

Beat egg yolks until light

Blend small amount of sauce into yolks, add mixture to sauce

Cook and stir over low heat until slightly thickened

Add vanilla

Cover and cool

Beat egg whites until still but not dry, fold into cooled chocolate mixture

Lay sliced pears in bottom of buttered 4 cup baking dish, pour chocolate mixture over

Bake at 350F degrees for 30 minutes or until set

Serve immediately

Pear Cobbler




1 can (1 lb, 14oz) pear halves

1 tbsp cornstarch

1/4 cup sugar

1 tbsp butter or margarine

1 tbsp lemon juice

1/2 tsp ginger



Topping

1-1/2 cups packaged biscuit mix

1 cup grated sharp cheddar cheese

2 tbsp salad oil or melted shorting

1 egg

1/3 cup milk



Preheat oven to 425F

Drain pears, reserving liquid

Quarter each half, set aside



Combine cornstarch and sugar in small saucepan

Stir in several tablespoons pear liquid until smooth, then blend in remainder

Stirring constantly, bring to boiling, boil 1 minute, or until thickened

Add pears, bring back to boiling

Remove from heat, stir in butter, lemon juice, and ginger

Keep hot

Make Topping

In medium bowl, stir together biscuit mix and cheese

In small bowl, with mixer combine oil, egg, and milk

Make well in center of biscuit mix

Add milk mixture all at once, stirring only until mix is damped

Pour hot fruit into 2 quart baking dish

Drop topping, by 6 equal spoonfuls, onto hot fruit

Bake 25 minutes, or until topping is firm and golden brown

Serve warm with light cream, if desired

Makes 6 servings

Chocolate Pear Torte




1 pkg (8-1/2 oz) chocolate wafers

1/2 soft butter or margarine

2 cups sifted confectioner’s sugar

2 eggs

1 tsp peppermint extract

2 cans (1lb, 14oz size) pear halves, drained

1 cup heavy cream



Lightly grease a 9 inch spring form pan

With rolling pin, crush cookies between two sheets or waxed paper

Measure 2-1/4 cups crumbs

In large bowl, with portable electric mixer, beat butter with sugar until light

Add eggs, beating until well combined

With rubber scraper, fold 2 cups cookies crumbs and the peppermint extract into butter mixture

Use half of mixture to cover bottom of prepared pan, refrigerate

Reserve rest of crumb mixture

Cut each pear half into quarters, lengthwise

Arrange half of pear sections over crumb layer, radiating from center, in petal fashion, leaving a half inch margin at edge

Cover pears with reserved half of crumb mixture, in an even layer, refrigerate 30 minutes

Refrigerate 8 pears sections, for decoration

With rest of pear sections, make another layer, petal fashion

Refrigerate 6 hours, or overnight

To serve

With sharp knife, loosen side from pan, remove pan

Whip cream just until stiff

Spread on top and side of torte

Arrange 8 reserved pear sections on top, petal fashion

Coat side with remaining 1/4 cup cookie crumbs

Makes 8 servings

Slow Cooker Pear Crunch



1 can (8 oz) crushed pineapple in juice, undrained

¼ cup pineapple or apple juice

3 tbsp dried cranberries

1 ½ tsp quick cooking tapioca

¼ tsp vanilla extract

2 pears, cored and cut into halves

¼ cup granola with almonds

Combine all ingredients, except pears and granola, in slow cooker, mix well

Place pears, cut side down, over pineapple mixture

Cover and cook on low 3 ½ to 4 ½ hours

Arrange pear halves on serving plates

Spoon pineapple mixture over pear halves

Garnish with granola

Makes 4 servings

Pear Pie with Streusel Topping




9 inch Pastry Shell (with 1/2 cup chopped fine Almonds, Sprinkled along the bottom)



Filling



1/4 cup granulated sugar

1/4 tsp ginger

4 tsp flour

5 ripe Bartlett Pears (2lbs)\

4 tsp lemon juice

1/4 cup light corn syrup



Streusel Topping



2/3 cup sifted all purpose flour

1/3 cup light brown sugar, firmly packed

1/3 cup butter or margarine



Make Streusel Topping

In small bowl, combine flour and sugar

Cut in butter, with pastry blender or 2 knives, until mixture is like coarse cornmeal

Refrigerate until ready to use



Preheat oven to 375



Make Filling

Combine sugar, ginger, and flour, sprinkle about a third of mixture over bottom of pie shell

Peel and core pears, slice thinly into bowl

Arrange half of the pears in shell, top with a third of sugar mixture

Arrange remaining pears top with remaining sugar mixture

Drizzle with lemon juice and corn syrup over top

Cover with Streusel Topping

Bake 40 to 45 minutes, or until pears are tender

Makes 6 servings

Pear Pie


2 cups chopped drained pears

1/2 cup chopped maraschino cherries

1/2 cup pear syrup

1/4 cup sugar

2 tbsp flour

1/4 cup butter

1/4 cup honey

3 tbsp lemon juice



Mix chopped pears, cherries, syrup, and lemon and bring to a boil.

Add sugar and flour mixed

Cook until thick, stirring constantly

Add honey and butter, stir until butter is melted, and cool the filling

Line a pie pan with pie paste and pour filling into it

Cover with strips of pie paste and bake in a hot oven 400 to 450 until pastry has cooked about 35 minutes

Mustard Pears (for Ham)




1 can (1 pound 13 oz) pear halves

1/4 cup sugar

1/4 cup prepared yellow salad mustard

2 tbsp vinegar

1 tsp horseradish

Pimiento pieces



Drain pears, reserving syrup

Put syrup and next 4 ingredients in saucepan and bring to boil

Pour over pears and let stand several hours or overnight

Lift out pears and chill

Garnish with pimiento and serve with baked ham or other meat

Makes 8 servingsNote syrup can be thickened and used as a glaze for onions, sweet potatoes, etc

Pear and Sweet Onion Galette


2 large sweet onions, thinly sliced (about 2 pounds)

1 tbls Butter or margarine, melted

1/4 tsp salt

1/4 tsp ground pepper

1/2 (15 ounce) pkg refrigerated piecrusts

2 firm Bosc Pears, peeled and thinly sliced

1 tbls all purpose flour

1/2 cup coarsely chopped pecans

3 ounces crumbled Roquefort cheese

Large egg, lightly beaten



Cook

Onion in butter in a large skillet over medium-low heat.

30 to 35 minutes or until onion is caramelized, stirring often, stir in salt and pepper, set aside



Unfold

Piecrust, and roll into a 14 inch circle on a lightly floured surface. Transfer to a parchment paper lined baking sheet



Combine

Pear slices and flour, toss gently to coat



Spread

3/4 of onion over the piecrust, leaving a 4 inch border around the edges. Arrange pear slices over onion, top with remaining onion, pecans and cheese. Fold over 4 inch borders of the dough, pressing gently to seal. Brush the dough with the beaten egg



Bake

At 425 for 24 to 25 minutes or until golden, shielding with aluminum foil, if necessary, to prevent excessive browning

Cool on baking sheet on a wire rack 5 minutes. Serve warm, or cool to room temperature on wire rack.
