| Buttermilk-Pear PancakesIngredients
- 1 1/4 cups all-purpose flour
- 3/4 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/3 cups low-fat buttermilk
- 2 tablespoons maple syrup
- 1 tablespoon vegetable oil
- 1 large egg, lightly beaten
- 3/4 cup pear, peeled and finely chopped
Directions1. Lightly spoon flour into dry measuring cups; level with a knife. Combine flour and next 4 ingredients (flour through salt) in a large bowl. 2. Combine buttermilk, syrup, oil, and egg; add to flour mixture, stirring until smooth. Fold in pear. 3. Spoon about 1/4 cup batter onto a hot nonstick griddle or a large nonstick skillet. Turn pancakes when tops are covered with bubbles and edges look cooked. | |

| Pear Jam 5 cups prepared fruit (about 3 1/2 pounds fully ripe pears)2 tablespoons lemon juice3 1/4 cups sugar1 box Sure*Jell Light Fruit Pectin Prepare fruit. Peel and core about 3 1/2 pounds pears. Chop very fine or grind. Measure 5 cups into 6 or 8 quart saucepan, add lemon juice. Then make Jam. Mix 1/4 cup sugar with fruit pectin, and then stir into fruit in saucepan. Place over high heat and stir until mixture comes to a full boil. Immediately add remaining sugar and stir. Bring to a full rolling boil and boil hard 1 minute. Stirring constantly remove from heat and skim off foam with metal spoon. Ladle quickly into hot jars, filling to within 1/8 inch of top. Cover and process in boiling water bath for 10 minutes. Makes about 10 (8ounce) jars. | |

| Pear Salsa
1 ½ cups chopped unpeeled pear (about 1 large pear)
2 tbsp chopped green onions
2 tbsp chopped fresh cilantro
2 tbsp chopped hot yellow chilies (about 1 medium)
2 tsp grated lemon peel
2 tbsp lemon juice
½ tsp salt
Mix all ingredients in small bowl. Cover and refrigerate 1 hour

| Slow Cooker Pear Crunch
1 can (8 oz) crushed pineapple in juice, undrained
¼ cup pineapple or apple juice
3 tbsp dried cranberries
1 ½ tsp quick cooking tapioca
¼ tsp vanilla extract
2 pears, cored and cut into halves
¼ cup granola with almonds
Combine all ingredients, except pears and granola, in slow cooker, mix well
Place pears, cut side down, over pineapple mixture
Cover and cook on low 3 ½ to 4 ½ hours
Arrange pear halves on serving plates
Spoon pineapple mixture over pear halves
Garnish with granola
Makes 4 servings
