| My mother has used this recipe for over 30 years and it's one of the best I've ever had. Hope you like it also.
BANANA NUT BREAD
½ cup cooking oil
1 cup sugar
2 eggs, beaten
3 ripe bananas, mashed
2 cups all purpose flour
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
3 tablespoons milk
½ teaspoon vanilla extract
½ cup chopped nuts
Beat oil and sugar together. Add eggs and banana pulp and beat well. Add sifted dry ingredients, milk and vanilla. Mix well and stir in nuts. Pour into greased and floured loaf pans. Bake in preheated moderate oven (350ºF) for about 1 hour. Cool well and store overnight before cutting. Makes 1 loaf. Good with cream cheese for tea sandwiches. | Love & Hugs, CoffeeQueen7047 | |
