Cranberry-Banana Mold




1 (3oz) pkg raspberry flavored gelatin

1 cup boiling water

1 (16 oz) can whole cranberry sauce

2 bananas, sliced

1/2 cup chopped pecans



Dissolve gelatin in water. Add Cranberry sauce and stir until blended

Chill until partially thickened

Add sliced bananas and pecans

Spoon into molds

Chill until firm

Serve on greens

Makes 6 to 9 servings

Cranberry-Banana Mold Salad

Banana Shrimp Boat Casserole




2 tbsp butter or margarine

3/4 cup chopped onion

1/2 cup chopped green pepper

1 cup sliced celery

1 pkg (10oz) frozen, shelled, deveined, cooked shrimp (2-1/2 cups cooked, cleaned shrimp)

1 can (10oz) cream of mushroom soup

1 tsp salt

1 tsp chili powder

Freshly ground pepper to taste

3 cups cooked rice

2 bananas, peeled and diced



Heat butter in skillet and sauté onion, pepper and celery about 5 minutes

Stir in shrimp, soup and seasoning and bring to a boil

Mix in rice and bananas and spoon into a buttered 1-1/2 qt casserole

Cover

Bake in 375 oven 30 minutes or until mixture is bubbly

Makes 4 to 6 servings

Bananas with Cheese



Peel bananas and cut crosswise into 1 inch pieces.

Marinate in lemon juice (or grapefruit, orange, or pineapple

Juices, instead of lemon)

For 1 hour.



Drain and cover with cream cheese...roll in chopped nuts

My mother has used this recipe for over 30 years and it's one of the best I've ever had. Hope you like it also.



BANANA NUT BREAD



½ cup cooking oil

1 cup sugar

2 eggs, beaten

3 ripe bananas, mashed

2 cups all purpose flour

1 teaspoon baking soda

½ teaspoon baking powder

½ teaspoon salt

3 tablespoons milk

½ teaspoon vanilla extract

½ cup chopped nuts



Beat oil and sugar together. Add eggs and banana pulp and beat well. Add sifted dry ingredients, milk and vanilla. Mix well and stir in nuts. Pour into greased and floured loaf pans. Bake in preheated moderate oven (350ºF) for about 1 hour. Cool well and store overnight before cutting. Makes 1 loaf. Good with cream cheese for tea sandwiches.

3 Way Banana Bread




1/3 cup shortening

2/3 cup sugar

2 eggs, slightly beaten

1-3/4 cups sifted all purpose flour

2-3/4 tsp baking powder

1/2 tsp salt

1 cup mashed bananas



Beat shortening until creamy or 2 minutes at medium speed on mixer

Gradually add sugar, beating until light and fluffy after each addition

Add eggs and beat until thick and pale lemon in color

Sift dry ingredients

Add alternately with bananas

Blend thoroughly after each addition



To Bake



Bread

Grease bottom only of 4-1/2x8-1/2 inch loaf.

Spoon batter into pan

Bake in moderate (350) oven for 60 to 70 minutes

Bread is done when center springs back when touched lightly with finger

Let cool 20 minutes in pan before turning onto rack

Makes 1 loaf



Banana Date Bars

To basic batter add 1 cup chopped dates

Spread in greased and floured 15x10x1 inch pan

Bake in moderate (350) oven for 20 minutes

Cool in pan

Cut into 42 bars

Sprinkle sifted confectioner’s sugar (about 3/4 cup) through a lace patterned paper doily and over top of bars or roll in confectioner's sugar

Store in airtight container in a cool area or wrap and freeze



Banana Jam Ring

Into a well greased and floured 6-1/2 cup (9-inch) ring mold spoon a layer of the basic batter.

Over it spoon 1/4 cup strawberry preserves.

Add more batter and 1/4 cup more preserves

Top with remaining batter.

Cut down through batter to marbleize.

Bake in a moderate 350 oven for 35 to 40 minutes

Cool 5 minutes in pan and turn out on rack

Cool

Ice with icing made by mixing 1 cup confectioners sugar with 1 tbsp soft margarine and 1 tsp hot water

Decorate with candied fruit as desired

Flowerpot Banana Bread


Flowerpot Banana Bread
2 c Flour
1 ts Baking soda
1/2 tps Salt
1/2 c Butter
1 c Sugar
2 Eggs
1 c Ripe bananas; mashed, 2-3
1/3 c Milk
1 tps Lemon juice
1/2 c Walnuts; chopped
Clay flowerpot; new, 6 1/2"

Prepare flowerpot as follows: After washing, grease, line with wax paper, cutting to fit, and grease again. Mix flour, baking soda and salt. In a separate bowl, cream butter, then add sugar, eggs and bananas, blending thoroughly. Combine milk and lemon juice to banana mixture, alternately add flour and milk mixture, then stir in nuts. Pour mixture into prepared flowerpot and place in removable liner. Place liner in base. Cover with 2 to 3 paper towels. Cover and cook on low 5-6 hours. Do not lift lid - NO PEEKING -until last hour.
NOTE: A 2 lb. coffee can may also be used - but it's not as cute.

Banana Coffee Cake




1-1/2 cups diced bananas

1/4 cup milk

1 egg

One 14-1/2 oz package cinnamon streusel coffee cake mix



Heat oven to 400

Grease bottom of 8 inch square or 8-9 inch round baking pan



Put bananas into small mixer bowl (1-1/2 qt) and mash with fork or spoon

Add milk, egg and coffee cake mix from pkg



Blend at low speed until all ingredients are moistened

Then beat at medium speed of electric mixer for 2 minutes or 300 strokes with a spoon



Spread half the batter in pan

Sprinkle with half of the topping mix from the pkg

Spread remaining batter and sprinkle with remaining topping mix



Bake 35 to 40 minutes or until top springs back when pressed with finger

Makes 9 to 12 servings

Guatemalan Baked Bananas



4 bananas

4 tbsp lime or lemon juice

1/3 cup honey

4 tbsp dry sherry

2 tbsp melted butter

1/2 pint (1 cup) sour cream

Ground cinnamon



Heat oven to 400



Peel bananas and place in buttered shallow baking dish

Brush fruit with lime or lemon juice

Blend honey with sherry and melted butter, mixing well

Pour honey mixture over bananas

Bake 15 to 20 minutes, or until bananas are tender

Spoon any remaining syrup over bananas before removing from baking pan

Serve hot with generous spoonfuls of sour cream and a dusting of cinnamon

Makes 4 servings

Mint Glace Banana's


Good with roast lamb or broiled chops




1/4 cup butter

6 bananas, peeled

1/2 cup mint jelly

1 tbsp lemon juice

Dash of nutmeg or cinnamon



Melt butter in skillet

Add bananas and sauté on both sides until golden

Add mint jelly and as it melts, mix in lemon juice

Baste bananas with sauce until well glazed

Serve hot or cold with a dash of nutmeg or cinnamon

Makes 6 servings

Banana Puffs




Take as many bananas as there are persons to serve

Roll in sugar and cinnamon,

Then roll each banana in thin pie crust

Bake in hot oven (375) for 15 minutes

Serve with whipped cream or lemon sauce

Puffs may be served hot or cold.

Baked Bananas Calypso




1/3 cup granulated sugar

1/3 cup light brown sugar, firmly packed

3 medium ripe bananas (1-1/4 lb)

2 (3 inch) cinnamon sticks, broken into small pieces

1/4 cup dry red or white wine

1/8 tsp ground cinnamon

2 tbsp butter or margarine

Light cream or Ice Cream



Preheat oven to 375F

Lightly grease an 8x8x2 inch baking dish

Combine granulated and brown sugars on sheet of waxed paper, mixing well

Peel bananas, roll in half of sugar mixture, coating well

Place in prepared baking dish pierce bananas all over with cinnamon stick pieces

Sprinkle with wine, then with rest of sugar mixture and ground cinnamon

Dot with butter

Bake, uncovered and basting occasionally, 30 to 35 minutes, or until tender

To serve

Remove cinnamon pieces, cut each banana in half diagonally

Serve slightly warm, with cream

Makes 6 servings

Banana Dumplings




1 pkg (10oz) piecrust mix

4 large, not overly ripe bananas

1/4 cup lemon juice

1/3 cup light brown sugar, firmly packed

1 tsp cinnamon



Sauce

2 squares, unsweetened chocolate

1 tbsp butter or margarine

1 cup light corn syrup

1/8 tsp salt



Make piecrust mix as package label directs

Refrigerate until ready to use

Preheat oven to 425F

Peel bananas halve crosswise

Brush well with lemon juice

On sheet of waxed paper, mix sugar with cinnamon

Roll each banana half in sugar mixture

On lightly floured surface, roll out pastry to a 14 by 8 inch rectangle

Cut into 8 strips, each 14 by 1 inch

Wrap a pastry strip around each banana half, spiraling to overlap about 1/4 inch

Arrange in lightly greased 9x9x1-3/4 inch baking pan

Bake 40 minutes, or until crust is golden brown

Meanwhile, make sauce:

Melt chocolate with butter over hot, not boiling, water

Gradually stir in corn syrup, add salt

Keep warm over hot water

Serve dumplings warm, with sauce spooned over

Makes 8 servings

Banana-Walnut Soufflé Pie
This is recipe is from the 1940's

1-1/2 cups confectioner’s sugar, sifted
1 cup mashed ripe bananas
2 egg whites
2 tsp lemon juice
1/4 tsp salt
1/8 tsp cream of tartar
1/2 cup finely chopped walnuts
1-1/2 tsp vanilla
1 (9inch) pie shell, baked until just beginning to color
1/2 pint heavy cream, whipped with 1 tbsp sugar
Walnuts, halved or chopped

Preheat oven to 375 degrees
Mix confectioners sugar, mashed bananas, egg whites, lemon juice, salt and cream of tartar
Beat until mixture stands in soft peaks, about 4 minutes at high speed of electric mixer
Stir. In finely chopped walnuts and vanilla
Heap in semi baked pie shell
Bake 25 to 30 minutes or until top is well browned
Filling puffs up in baking, but will settle when cool
Serve with lightly sweetened whipped cream topped with walnuts
Serves 8

Banana Cream Pie


1/2 cup sugar

2 tbsp cornstarch

3 tbsp flour

1/2 tsp salt

1-1/2 cups milk, scalded

2 egg yolks

2 tbsp butter

1/2 tsp vanilla

2 egg whites

3 tbsp sugar

1 or 2 bananas sliced



Mix sugar, flour, and salt in bowl

Stir in scalded milk return mixture to top of double boiler

Stir over boiling water until mixture has thickened

Cover let cook while beating egg yolks

Stir a little of the hot milk mixture into yolks

Stir diluted yolks into contents of double boiler

Cook 1 minute

Remove from the stove

Stir in butter and vanilla and cool

When cool,

Pour into previously baked cool shell

Arrange the sliced bananas around the top of the pie and cover with a meringue made by beating the egg whites until they hold their shape, and then beating in the 3 tblsp of sugar gradually

Pile lightly on pie, being sure it touches crust all around and bake in a slow oven 300F until browned about 20 minutes

Deluxe Banana Sour Cream Pie




9 inch pie shell

1 pkg (3-1/4 oz) vanilla pudding and pie filling mix

1-1/2 cups dairy sour cream

3 medium bananas

1 tbsp lemon juice



Prepare and bake pie shell, let cool completely before filling

In small saucepan, combine pudding mix with sour cream

Over medium heat, bring to boiling, stirring constantly

Remove from heat

Let cool 20 minutes, stirring occasionally

Meanwhile, slice bananas thinly sprinkle with lemon juice

Turn half of cooled pudding into pie shell

Arrange bananas over pudding cover bananas with remaining pudding

Refrigerate at lest 2 hours before serving

Serve plain or garnish with whipped cream

Makes 6 to 8 servings

Banana Meringue Cream Pie




Sugar

6 tbsp flour

1/4 tsp salt

2-1/2 cups milk

3 eggs separated

1 tbsp butter or margarine

1/2 tsp vanilla extract

2 or 3 fully ripe bananas

Baked 9 inch pie shell

1/4 tsp cream of tartar



Mix 1/2 cup sugar, the flour and salt in top of double boiler

Add milk and cook, stirring, over boiling water until thickened

Cover and cook, stirring occasionally, 10 minutes

Beat egg yolks slightly

Add a small amount of milk mixture slowly to yolks, put back in double boiler and cook, stirring, 2 minutes

Remove from heat and add butter and vanilla, cool

Slice bananas into shell and cover at once with cooked mixture

Add cream of tartar to egg whites and beat until foamy

Gradually add 6 tbsp sugar

Beating until very stiff

Pile lightly on pie and bake in preheated 400F oven for 5 minutes, or until golden

Cool before cutting

Ham-Banana Casserole




1/4 cup melted butter or margarine

2 tbsp all purpose flour

1/2 tsp salt

1 cup milk

1/2 cup grated cheddar cheese

6 slices boiled ham

1 tsp prepared mustard

6 medium banana's green tipped



Preheat oven to 350F

Grease a 12x8x2 inch baking dish



In medium saucepan, blend 2 tbsp butter, flour, and salt



Gradually blend in milk, cook, stirring over low heat, until thickened and smooth



Add cheese, and stir until melted and blended

Remove from heat



Spread ham slices with mustard

Peel bananas, and roll each in a ham slice



Place banana rolls, seam side down, in prepared baking dish



Brush banana tips with remaining 2 tbsp butter

Top with cheese sauce



Bake 15 to 20 minutes

Makes 6 servings

Cherry Banana Cream Pie




3/4 cup butter, softened, divided

2 cups crushed vanilla wafers (about 60)

3/4 cup confectioner’s sugar



Filling

1 cup heavy whipping cream

1/4 cup sugar

2 tbsp baking cocoa

1 cup chopped walnuts

1 large firm banana, thinly sliced

1/3 cup halved maraschino cherries

Whipped topping, chocolate curls and additional maraschino cherries



Melt 1/2 cup of butter, toss with the wafer crumbs

Press into a 9 inch pie plate

In a small mixing bowl, cream the remaining butter beat in confectioners sugar until combined

Spread over the crust



In another mixing bowl, beat the cream, sugar and cocoa until stiff peaks form

Fold in walnuts, banana and maraschino cherries

Spoon into crust

Cover and refrigerate the pie for 8 hours or overnight

Garnish with whipped topping

Chocolate curls and cherries

Yield 6 to 8 servings

Banana-Sweet Potato Casserole




1 can (1 lb, 1 oz) sweet potatoes

2 large ripe bananas, peeled and quartered

1/4 cup orange juice or unsweetened pineapple juice

1/2 tsp salt

Dash pepper

1/4 cup butter or margarine

1/4 cup light brown sugar, firmly packed

2 tsp grated orange peel

2 tbsp chopped toasted almonds



Preheat oven to 400F

Arrange potatoes and bananas in an ungreased 10 x 6-1/2 x 1-1/2 inch baking dish



Pour orange juice over all, sprinkle with salt and pepper



In small bowl, mix butter, brown sugar, and orange peel with fork until mixture is crumbly

Sprinkle evenly over potatoes and bananas, sprinkle almonds over top



Bake, uncovered, 20 minutes

Delicious with ham or pork

Makes 4 to 6 servings

6 medium bananas Use slightly under-ripe bananas, green tipped or yellow, not flecked with brown.



3 tbsp butter or margarine, melted

1 tbsp lemon juice

1-1/2 tsp seasoned salt



Cut a double thickness of heavy duty foil into 12 inch square

Turn up about 1/2 inch all around, to form a tray

Remove half the peel, lengthwise, from each banana

Leave rest of peel intact

In small bowl, combine butter with lemon juice and seasoned salt

Use to brush peeled section of bananas

Arrange bananas on foil tray

Grill, 3 inches from prepared coats, about 20 minutes, or until bananas are tender

Makes 6 servings

Banana Split Bread



1 cup sugar

1/2 cup butter, softened

2 eggs

2 cups flour

1 teaspoon baking soda

1 cup mashed bananas

1 (11-ounce) can mandarin oranges, drained

1 cup chocolate chips

1 cup coconut

1/2 cup chopped maraschino cherries



Preheat oven to 350 degrees.

Grease two 8x4-inch loaf pans



In a mixing bowl, cream sugar and butter, beat in eggs.

Combine flour and baking soda.

add to the creamed mixture alternately with the mashed bananas.

Stir in oranges, chocolate chips, coconut and cherries.

Pour into prepared pans.

Bake 50 to 55 minutes, until tester inserted near center comes out clean.

Cool 10 minutes.

Remove to wire rack and cool completely



Makes 2 loaves.

Glazed Banana Pie




1 package (4-serving size) Jell-O banana cream pudding and pie filling

1 1/2 cups milk

1 baked 9 inch pie shell, cooled

1 package (4-serving size) Jell-O Strawberry gelatin

1 cup boiling water

1/2 cold water

1 banana sliced



Prepare pie filling mix as directed on package for pie, reducing milk to 1-1/2 cups.

Pour into pie shell

Cover surface with wax paper.

Chill about 1 hour



Meanwhile, dissolve gelatin in boiling water.

Add cold water, chill until slightly thickened

Arrange banana slices on pie filling.

Spoon gelatin over bananas

Chill until firm, about 2 hours

Banana Split Float




2 ripe medium size bananas

3 cups cold milk

1 pkg frozen, sliced sweetened Strawberries thawed

1-1/2 pints Chocolate ice cream softened



In a mixer or blender, mash bananas, Cold Milk, Strawberries and 1/2 pint Ice Cream, beat well, Until blended

Pour into a tall glass, chilled, and top with a scoop of Ice Cream.
