Banana Mayonnaise




1 ripe banana

1 tbsp freshly squeezed lime or lemon juice

1/2 cup mayonnaise



Mash the ripe banana and add juice

Blend in mayonnaise

Cover and chill in refrigerator

Makes 1 cup

Banana Frosting


1/2 cup mashed banana

1 tsp lemon juice

1/4 cup butter

3-1/2 to 4-1/2 cup confectioner’s sugar



Combine banana and lemon juice

Cream together butter and 1 cup confectioner’s sugar

Beat in banana and enough confectioners’ sugar to make mixture of spreading consistencyMakes enough for tops and sides of two 8" cake layers

Banana Cream Filling-for JellyRolls




1 cup heavy cream

1/2 cup sifted confectioner’s sugar

1 small ripe banana, diced (1/2 cup)

1 tsp lemon juice

1/4 cup finely chopped pecans



Combine cream and sugar in medium bowl

Refrigerate, along with rotary beater, until well chilled at least 40 minutes

In small bowl, lightly toss banana with lemon juice

Beat cream mixture until stiff

Fold in banana to combine well

Use three fourths to fill roll

Spread rest over top

Sprinkle with pecans

Makes about 2 cups

Creamy Banana Topping




Mash 1 peeled, ripe banana in a small bowl with 1/2 tsp lemon juice

Gently fold in 1 cup (1/2 a 4-1/2 oz pkg) frozen whipped topping which has been defrosted

And 1 tbsp milk

Chill

Makes 1-1/4 cups

Keeps for one to 2 hours in refrigerator

Use as topping for plain cakes, puddings, or in a parfait (which donkey loves)

Fluffy Banana Topping




Slice 1 peeled ripe banana into a 1-1/4 qt mixing bowl

Add 1 egg white, dash of salt

1/4 cup sugar

1/2 tsp vanilla

Beat with electric mixer or rotary beater until smooth and fluffy

Chill for about 1 hour before serving

Makes about 1-1/2 cups

Serve as a topping for pudding

Cake or hot waffles or pancakes



Optional: Just before serving fold in 1 tbsp brandy

Banana Hard Sauce




1/2 cup butter or margarine

1 pound sifted confectioner’s sugar

1 mashed banana

1 tsp lemon juice (or 2 tsp brandy)

Nutmeg



Cream butter

Gradually add 1 cup sugar

Beating until fluffy



Add banana, lemon juice and remaining sugar, continuing to beat until smooth

Sprinkle with nutmeg

Refrigerate

Makes about 2 cups

Serve with hot steamed fruit or chocolate pudding

Hot Butterscotch Banana Sauce




1 jar (10-1/2 to 12 oz) butterscotch topping

2 bananas, mashed



Combine butterscotch topping and mashed bananas in a small saucepan

Cook and stir until mixture is hot and cook two minutes

Serve hot over ice cream

Makes about 1-3/4 cups

Any left over mixture will keep several days in the refrigerator and is good cold over ice cream, cake of pudding

Banana Sour Cream Cake
1 pkg (2 layer size) yellow cake mix
3 eggs
1 cup mashed ripe bananas (about 3 bananas)
1 cup Sour Cream
¼ cup oil
1 pkg (8oz) cream cheese softened
½ cup (1 stick) butter softened
1 pkg (16oz) powdered sugar (about 4 cups)
1 cup Walnuts pieces, finely chopped

Preheat oven to 350
Grease and flour 13x9 inch baking pan, set aside
Beat cake mix, eggs, bananas, sour cream and oil in large bowl with electric mixer on low speed just until moistened, stopping frequently to scrape bottom and side of bowl
Beat on medium speed 2 min.
Pour into prepared pan
Bake 35 minutes, or until wooden toothpick inserted in center comes out clean cool completely in pan on wire rack
Beat cream cheese and butter in large bowl with electric mixer on medium speed until well blended
Gradually add sugar, beating after each addition until well blended
Remove cake from pan, cut crosswise in half
Place one cake half, top side down, on large serving plate, spread top with frosting, top with remaining cake half, top side up
Frost top and sides of cake with remaining frosting
Carefully press walnuts into frosting onsides of cake
Store any leftovers in refrigerator
Makes 16 servings

Banana Ice Cream




1 quart cream

4 ripe bananas

1 cup sugar

Few grains of salt

1-1/2 tablespoon lemon juice



Remove skins of the bananas and force through a sieve with lemon juice

Partly freeze the remaining ingredients and add banana-lemon pulp.

Banana Ice


Juice of 3 oranges

Juice of 3 lemons

3 bananas, mashed

2 cups of sugar

3 cups of water



Dissolve the sugar in water

Mix fruit juices, and last, mash bananas and mix ingredients together

Put in freezer and turn freezer until the ice is hard

Let stand until ready to serve

Serves 8

Pineapple Banana Bread




1 cup butter, softened

2-3/4 cups sugar

1/4 cup honey

3 eggs

1 tbsp vanilla

4 ripe bananas, mashed

1 (20oz) can crushed pineapple

4-1/2 cups flour

1 cup chopped walnuts

2 tsp cinnamon

1-1/2 tsp baking soda

1/2 tsp salt



Preheat oven to 350

Grease 3 (8x5x3 inch large loaf pans)

In a large bowl, beat butter with sugar and honey

Beat in eggs and vanilla

Mix well

Stir in bananas and pineapple

Stir in flour, walnuts, cinnamon, baking soda and salt until moistened

Pour into prepared loaf pans

Bake for 1 hour or until toothpick inserted in center comes out clean

Cool 10 minutes

Remove from pan

Makes 3 loaves

Banana Cake

1 cup sugar
1/2 cup butter

1/2 cup low-fat sour cream
2 1/4 cups flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt

Preheat oven to 350 degrees
Butter and flour a 13x9 inch pan
Cream sugar and butter
Beat in eggs, one at a time
Add bananas and sour cream
Sift together flour, baking powder, Baking soda and salt.
Blend into batter
Spread batter evenly in prepared pan
Bake 1 hour
Serves 12 to 18

Banana Cream Cake

2/3 cup shortening
1-1/2 cups sugar
2 eggs
1 cup mashed bananas
4 tablespoons of sour milk
2 cups flour
1 teaspoon soda
1/2 cup chopped walnuts

Cream shortening add sugar gradually and cream again
Add unbeaten eggs one at a time
Beating thoroughly after each addition
Then add mashed bananas with sour milk stir well
Fold in sifted dry ingredients and bake in layers in hot oven, 375F for 20 to 27 minutes
Makes 2 layers

Banana Pound Cake

1 pkg (17oz) pound cake mix
1 cup mashed ripe bananas
2 eggs
1/2 cup chopped nuts, optional

Preheat oven to 325
Generously grease and flour a 9 inch loaf pan

Omit milk or water called for in pkg directions

Combine mix, bananas and eggs and beat 3 minutes at medium speed on electric mixer or 450 strokes by hand
Fold in nuts
Spoon into 9 inch loaf pan and bake 1-1/4 hours or until golden brown and cake springs back when lightly touched on top
Cool in pan for 30 minutes
Turn out on rack and coolStore cakes in plastic wrap

Banana Java Cake

1 pkg caramel flavor cake mix
2 eggs
1/2 cup water
1 tbsp honey
2 tsp dry instant coffee
1 cup mashed banana

Dissolve honey and dry coffee in water
Mix all ingredients in large mixer bowl
Blend until moistened
Beat 2 minutes at medium speed or 300 vigorous hand strokes
Bake 30 to 35 minutes at 350
Cool
Frost with banana butter cream frosting
May be baked in 2-8'layer pans, round
Or 2-9' square pans
Line pans with paper, grease and flour


Optional: Substitute 1 tbsp rum flavor extract for the honey and powdered coffee

Banana Lemon Sponge Tarts

Prepare one 3-1/2 oz pkg of lemon pudding as directed on package
Chill
Before assembling desserts beat chilled pudding slowly with rotary beater until creamy
With a sharp knife cut the rings off tops of 6 pkged sponge cakes
Cover base of each with about 1/2 sliced, peeled, ripe banana
Top with lemon pudding
Replace ring on pudding and garnish with 3 banana slices tucked upright into pudding
Place a maraschino cherry in center of bananas
Makes 6 servings

Banana Butterscotch Brickle




1 pkg butterscotch flavor pudding mix (4 serving)

2 cups milk

1/2 cup heavy cream, whipped

3/4 cup peanut brittle candies, broken into bits

2-3 bananas, sliced

Additional peanut brittle to garnish



Mix and cook pudding to directions on pkg

Cool to room temperature

Fold in whipped cream

In parfait glasses or decorative sherbet glasses, alternate layers of pudding, banana and peanut brittle, beginning and ending with pudding

Top each serving with a jagged section of candy brittle and several banana slices

Chill before serving

Makes 4 to 5 servings



Optional: follow same procedure as above but use vanilla pudding mix

Before stirring in milk, add 1 tbsp instant coffee powder to dry pudding mix

Banana Ham Rolls Au Gratin




Brush 4 firm peeled bananas with butter



Wrap each banana in a slice of boiled ham



Place in greased shallow baking dish



Pour heavy cream over top (about 1 cup)



Sprinkle with grated sharp soft cheese



Dot with butter,



Sprinkle with paprika and



Bake in a moderate hot oven 375



Bake for 30 minutes or until cheese melts and bananas are fork tender



Makes 4 servings

Banana Fruit Pudding




1 pkg (3oz) coconut cream pudding and pie filling

1 pkg (3oz) raspberry flavor gelatin

2-1/2 cups water

1/2 cup chopped nuts

1 cup chopped dates

2 ripe bananas



Combine pudding

Gelatin and water in saucepan

Cook and stir until mixture comes to a full boil

Continue boiling 3 to 4 minutes

Stirring until clear and slightly thickened

Chill until mixture begins to thicken, and then fold in nuts, dates and bananas which have been peeled and sliced thin

Spoon into 4 cup mold and chill until firm, about 4 hours

Or spoon into dessert glasses and chill (about 1 hour)

Makes 6 to 8 servings

Creamy Banana Pudding


1 can sweetened condensed milk

1-1/2 cups cold water

1 package (4 serving) instant vanilla pudding mix

2 cups (1 pint) whipping cream, whipped

36 vanilla wafers

3 medium bananas, sliced and dipped in lemon juice



In large bowl, combine sweetened condensed milk and water

Add pudding mix, beat until well blended

Chill 5 minutes

Fold in whipped cream.

Spoon 1 cup of pudding mixture into 2-1/2 quart glass serving bowl

Top with 1/3 each of the vanilla wafers, bananas and remaining pudding

Repeat layering twice, ending with pudding mixture

Chill thoroughly

Garnish as desiredStore leftovers covered in refrigerator

Strawberry Banana Mousse




1 pkg (3oz) strawberry flavor gelatin

1/2 cup heavy cream, whipped

4 bananas, sliced



Dissolve gelatin in water according to pkg directions

Chill until partially thickened (like unbeaten egg white)

Fold in whipped cream

Fill parfait glasses with alternate layers of gelatin mixture and banana slices

Garnish with additional banana slices and berries in season

Makes 6 servings

Banana Honey Dressing




1/2 cup salad oil

1/4 cup vinegar

2 tbsps lemon juice

1/2 tsp paprika

1 tbsp honey

1 tsp salt

2 ripe mashed bananas



Combine all ingredients in capped jar or bottle

Shake well until thoroughly blended, and then chill until ready to use



Shake well, once again, before serving



Makings 1-1/3 cups
