Bass with Erin Sauce




2 lb whole boned bass or whitefish

2 cups white vinegar

2 tsp salt

2 tsp pickling spice

1 cinnamon stick

1 bay leaf

Dash cayenne



Erin Sauce

2 tbsp butter or margarine

2 tbsp flour

1 cup evaporated milk, undiluted

1 pkg (10oz) frozen chopped spinach, thawed and undrained

1 egg yolk

2 tbsp milk



Preheat oven to 375F Wipe fish well with damp paper towels

Place in large, shallow baking pan

Pour vinegar over fish, add salt and spices

Bake covered with foil, about 40 minutes, or until fish flakes easily with fork

Remove to serving platter, and reserve 1/4 cup cooking liquid

Meanwhile,



Make Erin Sauce

Melt butter in saucepan, remove from heat

Stir in flour to make a smooth mixture

Gradually stir in evaporated milk

Bring to boiling, stirring

Reduce heat, simmer 2 minutes, or until quite thick

Add spinach and liquid, cook 5 minutes longer

Beat egg yolk slightly with fork, beat in milk

Stir a small amount of hot sauce in yolk mixture, combining well

Pour back into sauce

Cook, stirring and over low heat, until thickened

Just before serving, slowly stir in 1/4 cup cooking liquid from fish

serve Erin Sauce with fish

Boxty




1 cup grated pared raw potato

2 tsps lemon juice

1 cup sifted all purpose flour

1 cup mashed potatoes

1 tsp salt

2 tsp baking powder

1 egg, slightly beaten

1 cup buttermilk

1/4 cup butter or margarine, melted



In small bowl, toss grated potato with lemon juice to coat well

Put into cheesecloth press to squeeze out as much liquid as possible

In large bowl, combine flour and mashed potatoes, beating well with spoon

Add raw potato to flour mixture along with salt and baking powder

Slowly heat heavy skillet or griddle

To test temperature, drop a little cold water onto skillet, water should roll off in drops

Lightly grease skillet with some of butter

Drop batter

1 tbsp for each Pancake onto skillet

Cook 3 minutes on a side, or until nicely browned and raw potato is cooked

Continue until batter is used

Serve hot, buttered, and sprinkled with sugar,

For tea

Or serve as potato substitute

Makes about 24 Pancakes

6 to 8 servings

Cream of Asparagus Soup




3 tbsp butter or margarine

3 tbsp flour

3 pints soup stock

1 tsp salt

1 tsp chopped parsley

2 bunches green asparagus

1/2 cup cream

1 slice onion



Wash and drain asparagus and add one pint cold water

Boil 5 minutes, drain, reserve tips, add soup stock, and one slice onion (if you have no soup stock, use bouillon made of prepared cubes)

Boil 30 minutes, rub through a sieve

Heat butter, add flour and seasoning and cook with the hot stock and milk add the the tips

If soup stock is not salted, add more salt and a little pepper

serve in bouillon cups, garnish with tablespoon of whipped cream, in center of which 4 or 5 asparagus tips are placed

Corned Beef Brisket Recipe

Ingredients :
1 (8-10 lb) beef brisket
4 garlic cloves, peeled and cut in thirds
The Brine
1/2 cup white vinegar
4 tablespoons sugar
2 quarts water
1 cup kosher salt
3 bay leaves
1/2 teaspoon mustard seeds
1 pinch ground cloves
1 teaspoon peppercorns
The Simmering Liquid
water, to come up 3/4 to side of brisket
1/2 teaspoon whole allspice
1/4 teaspoon whole cloves
1 teaspoon peppercorns
1/2 teaspoon mustard seeds
4 garlic cloves, sliced

Preparation :

Combine all of the brine ingredients and bring to a boil, then cool. Place the beef brisket, the cooled brine, and the 4 garlic cloves in a huge plastic roasting bag. Make sure that all of the meat is covered by the brine, tie off tightly, place in a pot large enough to hold it all, and refrigerate for 6 to 7 days, turning occasionally.
After the 6 to 7 days, discard the brine after removing the brisket from the brine. The meat should be thoroughly rinsed and then placed in a Dutch oven or other large pot. Add enough water to come up 2/3 to 3/4 of the way up the side of the meat.
Add the rest of the Simmering Liquid ingredients (peppercorns, mustard seeds, allspice, cloves and garlic), bring to a boil and skim off any foam. Reduce heat to a low simmer and cook, covered, for at least 3 hours.
6-8 servings.

Colcannon




2lb potatoes

Boiling water

3 tsp salt

4 cups shredded green cabbage

1-1/2 cups finely sliced green onions

1/3 cup milk

1/2 cup butter or margarine

1/4 tsp pepper



Pare potatoes, cut each into 8ths

In 1/2 inch boiling water in medium saucepan

Cook potatoes, covered, with 1 tsp salt 15 to 20 minutes, or until fork-tender

Drain potatoes

Return to saucepan, heat slowly several minutes, to dry out

Meanwhile, in 1/2 inch boiling water in medium saucepan, cook cabbage, covered with 1/2 tsp salt 8 to 10 minutes, or just until tender Drain

Also, heat green onions with milk and 1/2 tsp salt

Bring to boiling, reduce heat, and simmer gently 10 minutes

Drain green onions, reserving milk

In large bowl of electric mixer, at medium speed, beat potatoes with 2 tbsp butter 1 tsp salt, and pepper

Beat in green onions and enough reserved hot milk to make potatoes light and fluffy

Stir in cabbage, combining well

Spoon Colcannon into serving dish

Make depression in center, fill with rest of butter

Makes 6 servings

Green Rice



3 cups cooked rice

1 cup chopped parsley

1/2 cup grated cheddar cheese

1/3 cup chopped onion

1/4 cup chopped green pepper

1 clove garlic, minced

1 (14 1/2-ounce) can evaporated milk

2 eggs, beaten

1/2 cup oil

1 tablespoon salt

1/2 teaspoon seasoned salt

1/2 teaspoon pepper

Juice and grated rind of 1 lemon

Sprinkling paprika



Preheat oven to 350 degrees. Grease a 2 quart casserole dish.



Mix rice, parsley, cheese, onion, green pepper and garlic in prepared casserole. Blend evaporated milk, eggs, oil, salt, seasoned salt, pepper, lemon juice and rind. Mix into rice.

Sprinkle with paprika.

Bake 45 minutes or until like a soft custard.



Serves 6

Irish Stew


2-1/2 lbs shoulder of lamb

2 large carrots

6 small onions

2 lbs potatoes

1 tsp salt

1/4 tsp pepper

4 cups water



Cut meat out into medium sized pieces, cover with cold water and bring to boiling point.

Skim, then add carrots cut into 8ths and simmer for 1 hour

Add salt, pepper, onions and potatoes, the latter cut into chunky pieces, then simmer until potatoes and meat are tender

Arrange meat in center of platter, the potatoes around it, and garnish with the carrots and onions

Chopped parsley may be sprinkled over the top

Old Fashioned Irish Potato Pie




Unbaked 9 in pie shell

3 eggs, separated

Sugar

1 cup riced cooked potatoes

1 cup hot milk

1 tbsp pure vanilla extract

Nutmeg (optional)



Bake shell in preheated 450 oven for 10 minutes

Beat egg yolks well and add 1 cup sugar, the potatoes, milk and vanilla

Pour into shell and sprinkle with nutmeg

If desired

Bake in 350F oven 30 minutes, or until golden

Beat egg whites until foamy throughout

Gradually add 6 tbsp sugar and beat until stiff

Spread on pie and bake in 400F oven 5 minutes, or until golden brown

Cool before cutting

Note: Meringue is not traditional and can be omitted, if preferred

Sausage & Potato Coddle

Ingredients :
1 pound pork sausage links
1/2 pound thick-sliced bacon, cut in 2" pieces
4 large potatoes, (2 pounds)
2 large onions, sliced
1/4 cup chopped fresh parsley
salt and pepper, to taste
2 cups water

Preparation :
In a skillet cook the bacon pieces until they turn golden, and then drain on paper towels. Brown sausages (prick in several places with fork) in bacon fat; drain on paper towels and slice into 1/4-inch pieces. Peel and slice potatoes about 1/4-inch thick. In a casserole dish, alternate layers of bacon, sausage, onion, and potato, seasoning the potatoes with salt and pepper. Sprinkle each layer with a little parsley. Pour off all but 2 tablespoons of fat from the skillet. Add water and bring to the boil. Pour over the potato casserole. Cover and bake at 350 degrees for 45 minutes. Remove the cover and cook for an additional 15 minutes, until the top is browned and potatoes become tender.
