Tomato

Tomatoes in various forms are used frequently as a seasoning.

Tomato paste
is made of pureed tomatoes that have been reduced at least by half
Because it is so concentrated, a spoonful of tomato paste is sometimes called for where a hint of tomato flavor is desired, but use judiciously to intensify a tomato sauce or perhaps to flavor a stew. You can freeze left tomato paste, either in its own small can or spooned into a plastic bag. It will be soft enough to spoon out in small quantities as you need it, and yu can leave the remainder int he freezer for future use

Tomato puree
is unseasoned tomato pulp with some tomato juice. It is quite bland in taste

Tomato sauce
is made from tomatoes, salt, peppers, and spices
Make yourown or choose from a variety of different brands, basically the same but seasoned differently. Taste and remember that you can add flavors to your own liking
Prepared sauces can be useful at certain times

Solid-packed tomatoes
are peeled whole unseasoned tomatoes in their own juice
They are the best substitute for fresh tomatoes, sometimes better to use when fresh tomatoes have little flavor.
