Herring Appetizer Salad
2 Matjes jerring in wine sauce, diced
1-1/2 cups diced boiled potatoes
1-1/2 cups diced pickled beets
1/2 cup diced dill pickles
1 cup peeled diced tart apple
2 medium onions, minced
1/4 cup milk vinegar
2 tbsp sugar
2 tbsp water
Freshly ground pepper to taste
2 hard cooked eggs, sliced
Parsley
Combine herring, potatoes, beets, dill pickles, apple, and
Onions in a bowl
Do not use aluminum
Mix vinegar, sugar, and water, and pepper, spoon over herring mixture
Toss with a fork so vegetables will not be broken, cover
Refrigerate 4 hours or overnight
At serving time, place on a large platter, garnish with egg
Slices and parsley
