| Chocolate Turkish Paste (Gum-drops) 3 tbsp granulated gelatin (unflavored)1/2 c cold water2 c granulated sugar1/3 c Hershey’s cocoa2/3 c water1 tsp vanilla Soak the gelatin in 1/2 c cold water 10 minutesCombine sugar, cocoa and 2/3 c water in a heavy saucepan, cook, stirring constantly, until the sugar is well dissolvedBlend in the gelatin and bring to a boil cook slowly over a low fire about 15 minutes 220F with out stirringRemove from fire stir in the vanilla, and cool undisturbed about 30 minutesLine the bottom of a shallow pan with waxed paperPour in cooled mixtureLet stand 24 hoursThen invert onto a well sugared surfaceCarefully peel off paperCut into squares and roll in granulated sugarMakes about 4 dozen | |
