Chocolate Cherry Cordials

Centers
1/4 c butter
2 to 2-1/4 c confectioner’s sugar
1 tbsp milk
1/2 tsp vanilla
1/8 tsp almond extract
About 3 dozen maraschino cherries, drained

Thoroughly cream butter with sugar and milk
Blend in vanilla and almond extract
If mixture is too sticky, additional sugar may be added
Mold a small amount around a cherry, being careful to completely cover each cherry
Place on waxed paper covered tray, set aside

Coating
2 c (12 oz pkg) Hershey’s mini chips or baking chips
2 tbsp shortening (not butter or margarine

Completely melt chips and shortening in top of double boiler over hot, not boiling water
Cool, stirring occasionally, until coating is lukewarm and slightly thickened (98F) maintain temperature while dipping

Dipping
Drop centers into coating mixture roll to coat completely and remove with fork
Draw fork across rim of pan to remove excess coating
Drop from fork upside down onto waxed paper, swirling (thread) of coating from fork across top for a decorative touch
Allow coating to become firm at room temperature
Check bottoms and reseal with additional melted coating if necessary
Store in a cool place (do not refrigerate) at least two days to form cordial
Yield about 3 dozen candies
