| Chocolate Cherry Cordials Centers1/4 c butter2 to 2-1/4 c confectioner’s sugar1 tbsp milk 1/2 tsp vanilla1/8 tsp almond extractAbout 3 dozen maraschino cherries, drained Thoroughly cream butter with sugar and milkBlend in vanilla and almond extractIf mixture is too sticky, additional sugar may be addedMold a small amount around a cherry, being careful to completely cover each cherryPlace on waxed paper covered tray, set aside Coating2 c (12 oz pkg) Hershey’s mini chips or baking chips2 tbsp shortening (not butter or margarine Completely melt chips and shortening in top of double boiler over hot, not boiling waterCool, stirring occasionally, until coating is lukewarm and slightly thickened (98F) maintain temperature while dipping DippingDrop centers into coating mixture roll to coat completely and remove with forkDraw fork across rim of pan to remove excess coatingDrop from fork upside down onto waxed paper, swirling (thread) of coating from fork across top for a decorative touchAllow coating to become firm at room temperatureCheck bottoms and reseal with additional melted coating if necessaryStore in a cool place (do not refrigerate) at least two days to form cordialYield about 3 dozen candies | |
