| Molasses Oatmeal Bread 1 pkg special active dry yeast1 cup warm water (110-115F)1/2 cup quick oatmeal1/4 cup molasses (or honey)1 1/4 teaspoons salt3 1/4 to 3 3/4 cups sifted all-purpose flour1 tablespoon soft shortening Add yeast to one cup warm water in large bowl and let stand a few minutesStirAdd oatmeal, molasses, salt and half sifted flourBeat until well blended about 100 strokes.Stir in shorteningAdd flour, a little at a time until sides and bottom of bowl are cleanedTurn dough onto a lightly floured cloth-covered boardGrease fingers dough may become stickyKnead until dough becomes smooth and little bubbles can be seen beneath surfaceRound up doughPlace smooth-side down in lightly greased bowl, turning once to grease topCover and let rise in warm place about 1 hour or until dent remains when finger is pressed deep into side of doughPunch down dough. Turn out onto board.Shape into loafPlace in lightly greased bread pan4 1/2 x 8 1/2 x 2 3/4 inchesDough will fill pan about half fullCover and let rise in warm place 35 to 45 minutes, or until dough just starts to round over top of panBake 35 to 45 minutes in preheated oven 400F. If bread is quite brown in 20 minutes cover top of loaf with brown wrapping paper remainder of baking timeBrush top of loaf with shortening if soft crust is desiredMakes one loaf | |
