| Tuna Spoon bread 1-1/2 cups milk1/2 cup yellow cornmeal2 eggs, separated2 cans (6-1/2-7oz) Tuna in oil2 tsp baking powder1/2 tsp salt Stir milk into cornmeal in a medium saucepanCook over medium heat, stirring constantly until thickened, about 5 minutesRemove from heat and cool slightlyBeat egg yolks; add to cornmeal along with tuna, baking powder and saltMix wellBeat egg whites until stiff, fold into mixturePour into 1-1/2 quart greased baking dishBake in 375 oven for 45-50 minutes until golden brownServe with Herb-Lemon Sauce Herb-Lemon Sauce 2 tbsp Butter or margarine2 tbsp cornstarch1-1/2 cups milk1/2 tsp salt1/8 tsp white pepper1 tbsp chopped parsley1 tbsp lemon juice1/4 tsp dried dill weed Melt butter in medium saucepanBlend in cornstarchGradually stir in milkCook, stirring constantly until thickenedAdd remaining ingredientsCook until well blended | |
