Dakota Seed Bread




2 pkg active dry yeast

2-1/2 cups lukewarm water, 105-115F

1 cup instant nonfat dry milk

1/3 cup honey

3 tbsp melted shortening or butter

2 tsp salt

1 cup uncooked old-fashioned rolled oats

1 cup dark rye flour

1 cup whole wheat flour

2 tbsp poppy seeds

4 to 4-1/2 cups bread flour



Glaze

1 egg beaten

1 tbsp milk

1/2 cup sunflower seeds



In a large bowl, dissolve yeast in water

Add dry milk, honey, shortening or butter, salt, oats, rye flour, whole wheat flour and poppy seeds

Beat until smooth

Let stand 15 minutes



Stir in bread flour, a cup at a time, beating constantly, to make stiff dough

Turn out onto floured board

Knead until dough is well mixed and springy

Turn dough into lightly greased bowl

Turn over to grease top of dough



Cover

Let rise until doubled, about 1 hour

Punch down

Turn out onto lightly oiled board

Divide into 3 parts



Shape each part into a round loaf

Place loaves with smooth sides up in greased 9 inch round cake pans



Let rise until almost doubled

Beat egg and milk



Brush loaves with egg mixture

Dust with the sunflower seeds

Bake at 375F for 35 to 40 minutes until loaves test done



Or you can braid this bread in to a wreath shape
