Remoulade Sauce




3/4 cup mayonnaise

1/4 cup oil

1 medium sweet pickle

2 tbsp chopped parsley

1 tsp dried tarragon or

1 tbsp fresh chopped tarragon

1/2 tsp dried chervil or

2 tsp fresh chopped chervil

1 tsp dried basil or

1 tbsp fresh chopped basil

1 tbsp chopped capers

1-2 anchovy fillets, chopped, optional



In a bowl, combine mayonnaise, oil, pickle, parsley, tarragon, cheril, basil and capers

Add anchovies, if used

For a less rich sauce, choose low-fat mayonnaise or substitute half light sour cream
