Cucumber Sauce for Seafood




2-1/2 cups finely chopped, pared cucumbers (about 2 medium)

1-1/2 cups dairy sour cream

1 tbsp Worcestershire sauce

1 tbsp lemon juice

2 tsp cider vinegar

2 tsp salt

1/8 tsp pepper

Chopped parsley



Refrigerate cucumbers in small bowl, covered, at least 1 hour



Meanwhile, combine sour cream with rest of ingredients, except parsley, mixing well

Refrigerate, covered until serving



Just before serving, drain cucumbers very well

Combine with sour cream mixture

To serve

Turn sauce into glass bowl embedded in ice on seafood platter

Garnish top with parsley

Makes 8 servings, about 4 cups
