EggNog Rosettes




1 egg

1 tbsp sugar

1/2 cup all purpose flour

1/2 cup dairy or canned eggnog

1 tbsp milk or water

1 tsp vanilla

Cooking oil for deep-fat frying

2 teaspoons sugar (optional)

1/4 tsp ground nutmeg (optional)



Stir together egg and sugar in a medium mixing bowl

Add flour, eggnog, milk and vanilla; beat with a rotary beater till batter is smooth



Heat a rosette iron in deep hot oil 375 for 30 seconds. Remove iron from oil and drain on paper towels



Dip the hot iron into batter (batter should extend 3/4's of the way up side of iron)

Immediately dip iron into hot oil

Fry for 15 to 20 seconds or till golden

Lift iron out of oil, tipping slightly to drain



Push rosette off iron with fork onto paper towel lined wire rack

Repeat with remaining batter, reheating iron about 10 seconds each time



Sprinkle the rosettes with colored sugar while still warm.

Or cool rosettes

Sprinkle rosettes with the sugar nutmeg mixture while still warm if desired.

Makes 20 to 25
