| Peppermint Pinwheels 3/4 cup butter, softened3/4 cup sugar1 egg yolk1 tsp vanilla extract2 cups all purpose flour1/2 tsp baking powder1/2 tsp salt1/2 tsp peppermint extract1/4 tsp red liquid food coloring In a large mixing bowl, cream butter and sugarBeat in egg yolk and vanillaCombine the flour, baking powder and salt gradually add to creamed mixture and mix wellDivide dough in half; add extract and red food coloring to one portion On a work surface, roll out each portion of dough between waxed paper into a 16x10 in rectangleRemove waxed paperPlace red rectangle over plain rectangle, roll up tightly jelly roll style, starting with a long sideWrap in plastic wrapRefrigerate overnight or until firm Unwrap the dough and cut into 1/4 inch slicesPlace 2 inches apart on lightly greased baking sheetBake at 350F for 12 to 14 minutes or until setCool for 2 minutes before removing to wire racks to cool completelyYield about 4 dozen | |
