| Italian Florentines These cookies are almost a confection half candy, half cookieThey are rich, sweet and excellent with coffeeThere name comes from the city of Florence, according to most food historians, back in the 15th or 16th century 3/4 c heavy cream1/4 c sugar1/4 c sifted flour1/2 c very finely chopped slivered blanched almonds3/4 c very finely chopped candied orange peel (4oz pkg)2 (4 oz) bars sweet cooking chocolate Stir cream and sugar together to blend wellStir in flour, almonds and orange peelDrop by scant teaspoonfuls about 1-1/4" apart onto heavily greased and floured baking sheetFlatten cookies with spatulaThey will be about 1/2 to 3/4" apart after flatteningBake in 350 oven about 10 to 15 minutes, until cookies brown lightly around edges (centers of cookies will be bubbling when you remove them from oven) Let stand 2 to 3 minutes or until become firmerPlace on rack or waxed paper to coolMelt chocolate over hot, not boiling, waterWhen cookies are cool, turn upside down and brush with melted chocolateLet dry several hours or overnight at room temperature to give chocolate time to setMakes 4 dozen | |
