| GumDrop Cookies 3/4 cup shortening 1 cup sugar, divided1/2 tsp almond extract1-3/4 cups all purpose flour1/2 tsp baking soda1/4 tsp salt1 cup chopped fruit-flavored or spiced gumdrops2 egg whites In a large mixing bowl, cream shortening and 3/4 cup sugarBeat in extractCombine the flour, baking soda and salt, gradually add to creamed mixtureStir in gumdrops In a small mixing bowl, beat egg whites until soft peaks formGradually add remaining sugar, beating until stiff peaks formFold into dough Drop by heaping tsps 2 inches apart onto greased baking sheetsBake at 350F for 12 to 15 minutes or until golden brownCool for 1 minute before removing from pans to wire racks to cool completelyYield 3-1/2 dozen | |
