| Chocolate Red Chile Pepper Cookies 2 cups flour1/8 teaspoon salt1/2 teaspoon baking soda1 teaspoon red chile powder or to taste1 tablespoon powdered instant coffee1 tablespoon hot water3/4 cup softened butter1-1/4 cups sugar1 egg, slightly beaten1 cup plus 1 tablespoon cocoa (preferably Dutch-process) Mix together flour, salt, baking soda and chile powder, set asideDissolve coffee in the hot water and set aside.In a medium mixing bowl, cream butter and sugar until light and combined Add egg, dissolved coffee and cocoa, beat until thoroughly blended.Add flour mixture a little at a time, beating after each addition until smooth. Seal in plastic, refrigerate at least one hour Preheat oven to 350Roll out chilled dough on a floured surface and cut into shapesBake on an ungreased cookie sheet for 10 to 12 minutes until firmCool completely, and then glaze with Tangerine Glaze Tangerine GlazeCombine 2 cups powdered sugar, the juice of 2 tangerines and 2 tablespoons Clear Karo syrup.With a mixer, beat until smooth and of desired consistency.Tint desired color. | |
