Layered Cranberry Mousse


1-1/2 cups boiling water

1 pkg (8 serving size) Jell-O brand cranberry flavor gelatin or any red flavor

1 can (16oz) whole berry cranberry sauce

1 cup cold water

1/4 tsp ground cinnamon

1/8 tsp ground cloves

2 cups thawed cool whip whipped topping



Stir boiling water into dry gelatin mix in large bowl at least 2 min. until completely dissolved. Add cranberry sauce, stir until mixed. Stir in cold water. Pour 2 cups of the gelatin mixture into 6-cup mold Refrigerate 45 minutes or until set but not firm.



Meanwhile stir cinnamon and cloves into remaining gelatin mixture. Refrigerate 30 minutes. Until slightly thickened (consistency of unbeaten egg whites) add whipped topping stir with wire whisk until well blended

Pour over gelatin mixture in mold



Refrigerate 4 hours or until firm

Store leftover gelatin in refrigerator

Makes 12 servings

Cranberry Bombe



2 pkg Cranberry Flavored Jell-0

2 8oz pkgs Cream Cheese

1 Tub Whipped Cream Topping

30 Oreo Cookies



Dissolve 2 pkg (3oz each) Jell-0 Cranberry Flavor Gelatin. (Or any red flavor.)

In to 1 cup boiling water in a medium bowl

Beat 2 tubs (8oz each) Philadelphia Cream Cheese Spread with electric mixer on low speed until softened

Gradually add gelatin mixture. Beating until smooth.



Mix in 1 tub (8oz) Cool Whip topping and a few spoonfuls Brandied Cranberry Sauce. Pour into a 2 or 2 1/2 qt bowl lined with plastic wrap.



Mix 30 finely crushed Oreo Chocolate Sandwich Cookies with 1/4 cup melted butter

Sprinkle over gelatin mixture press gently.

Cover and refrigerate overnight.

Release from mold onto serving plate. (its kind of like an Pineapple Upside down Thing)

Remove plastic Wrap

Drizzle with melted Bakers Premium White Chocolate Baking Squares or top with additional crushed Oreo Chocolate Sandwich cookies.



You can use this recipe for anytime of the year just change the Jell-0 to suit your needs.



(Brandied Cranberry Sauce

Place 4 cups fresh or frozen cranberries in 9x13 in baking dish. Sprinkle evenly with 2 cups sugar.

Cover and bake at 300F for 1 hour. Remove from oven

Stir carefully then stir in 1/3 cup brandy or orange juice. Pour into jars or serving dishes

Store in refrigerator

Makes about 3 cups)

Almond Cranberry Tart




1-1/4 cups sugar, divided

1 cup finely chopped toasted slivered almonds

1 cup all purpose flour

1/2 cup cold butter

1 egg

1 tsp vanilla extract

1 envelope unflavored gelatin

1/4 cup water

1 pkg (12oz) fresh or frozen cranberries

1/2 cup red currant jelly

Whipped cream and additional chopped almonds optional



In a bowl, combine 1/4 cup sugar, almonds and flour

Cut in the butter until crumbly

Beat egg and vanilla, add to flour mixture and stir until moistened

Cover and chill for 30 minutes



Coat fingers with flour and press mixture into the bottom an d1-1/2 in up the sides of a greased 9 in spring form pan



Bake at 350 for 25 to 30 minutes or until golden brown

Cool



Meanwhile, soften gelatin in water

Set aside

In a saucepan cook cranberries, jelly and remaining sugar over medium low heat until berries pop

Remove from the heat stir in gelatin until dissolved

Cool

Pour into crust

Chill for at least 4 hours

Garnish with whipped cream and almonds if desired

Yield 8 to 10 servings

Cranberry Nut Dessert




1 cup all purpose flour

1 cup sugar

1/4 tsp salt

2 cups fresh or frozen cranberries

1/2 cup chopped walnuts

1/2 cup butter, melted

2 eggs, beaten

1/2 tsp almond extract

Whipped cream or ice cream, optional



In a bowl, combine the flour, sugar and salt

Add cranberries and nuts, toss to coat

Stir in the butter, eggs and extract (mixture will be very thick if using frozen berries) Spread into a greased 9 inch pie plate



Bake at 350 for 40 minutes or until a toothpick inserted near the center comes out clean

Serve warm with whipped cream or ice cream if desired

Yield 8 servings

Cook for 5 minutes or until the berries begin to pop but maintain their shape.

Yogurt Panna Cotta
With Fresh Cranberry Sauce




1 (.25oz) envelope unflavored gelatin

1/4 cup warm water

1-1/4 cups whipping cream

1/2 cup sugar

2 cups plain low-fat yogurt

2 tsp grated lemon rind

1 tsp vanilla extract

Fresh Cranberry Sauce



Sprinkle gelatin over 1/4 cup warm water in a small bowl. Stir 3 minutes or until gelatin dissolves, set aside.



Stir cream and sugar together in a small sauce pan gradually bring to a boil over medium heat. Remove from heat, whisk in gelatin mixture, yogurt, lemon rind, and vanilla until blended



Pour warm mixture into 6 (4oz) ramekins or custard cups. Cover and chill for least 8 hours or until firm.

Remove from the refrigerator, and let stand at room temperature 5 minutes.

Invert panna cotta into individual serving bowls.

Serve with Fresh Cranberry Sauce

Cranberry Butter




10 cups fresh or frozen cranberries

2/3 cup apple juice

1/2 to 3/4 cup sugar

1 cup maple syrup

1/2 cup honey

1/2 tsp ground cinnamon



In a sauce pan medium heat, bring cranberries, apple juice and sugar to a boil

Cook for 10 to 15 minutes or until all berries have popped, stirring occasionally

Remove from the heat, cool slightly

Process in batches in a blender or food processor until smooth



Return cranberry mixture to the saucepan, add remaining ingredients

Bring to a boil over medium heat

Reduce heat, simmer, uncovered, for 10 minutes or until thickened, stirring occasionally

Cover and chill for 8 hours or overnight

Store in the refrigerator

Yield 5 cups

Cranberry Grapefruit Relish (my mom's)


Wash 2 cups fresh cranberries

Put through food processor

Add 3/4 cup sugar Mix well

Peel and section and dice 1 grapefruit

Stir into cranberry mixture

Chill

Makes 2 cups

Cranberry Jelly




1 lb fresh cranberries

1 cup boiling water

2 cups sugar



Place fresh cranberries in large saucepan, cover with boiling water

Cook over medium heat, stirring constantly until berries burst and mixture thickens about 5 minutes

Press mixture through sieve or food mill

Add sugar, stir till dissolved

Pour into hot sterile jars, cover and refrigerate



Makes approximately 1 quart

This is meant to be used as a meat accompaniment, but is also good on bread or rolls

Cranberry Chutney


1 (1-lb 14 oz) can fruit cocktail

1/2 cup orange juice

1/2 cup sugar

1/4 cup light brown sugar

1/4 cup cider vinegar

1/2 tsp ground cloves

1/4 tsp red pepper

1/2 tsp salt

2 cups cranberries

1 cup chopped, unpeeled apples

1 tbsp, finely chopped candied ginger

1 small clove garlic, minced

3/4 cup seedless raisins



Drain fruit cocktail

Measure 1-1/4 cup syrup reserve fruit

Combine syrup, orange juice, sugar, brown sugar, vinegar, cloves, red pepper and salt in a heavy 3 quart saucepan

Bring to a full boil, stirring often

Add cranberries and remaining ingredients

Cook until berries pop, about 5 minutes

Stir in fruit cocktail

Simmer, stirring often, until mixture thickens slightly, about 15 minutes

Pour into hot, sterilized jars

Seal immediately or store in refrigerator

Chutney will thicken as it cools

Makes about 2-1/2 pints

Cranberry Apple Sauce


1 cup cranberries

1 cup apple (diced)

1 cup water

3/4 cup sugar (more if you wish it sweeter)



Place the apple in a pot, the cranberries over the apples, and the water (water should not reach to more than half the depth of the fruit)

Cover closely and place on moderate flame

After the berries have commenced to pop open, stir sugar into sauce, and then stir mixture occasionally until berries are all mashed and sauce is thick

Cranberry Topping




1 cup heavy cream, whipped

1/2 cup sugar

1 (8-1/2 oz) can crushed pineapple, drained

1-1/2 cup Cranberry Relish drained



Whip cream, adding sugar slowly, until stiff

Fold in pineapple and relish, but do not blend completely

Serve on angel food cake slices or use as filling and topping for angel food and other cakes. Makes about 1 quart

Cranberry Sherbet




2 cups fresh cranberries

1 tsp unflavored gelatin

2 tbsp lemon juice

1 cup orange juice

1-1/2 cups sugar

2 egg whites



Wash cranberries, removing stems

Turn into 2-1/2 quart saucepan

Add 1-1/2 cups water, simmer, covered, 10 minutes

Meanwhile, sprinkle gelatin over 2 tbsps cold water in medium bowl, let stand 5 minutes

Stir in lemon juice, orange juice, and sugar

Then press cranberries and liquid through a sieve, to remove skins and seeds

Add to gelatin mixture, stirring until gelatin and sugar are dissolved

Pour into ice cube tray, freeze just until mushy about 1 hour

Then beat egg whites, in small bowl of electric mixer at high speed, just until soft peaks form

Turn cranberry mixture into large bowl of electric mixer, beat, at medium speed, until smooth

With rubber scraper, gently fold egg whites into cranberry mixture until combined

Turn into 2 ice cube trays freeze until firm about 2 hours

Turn into large electric mixer bowl, beat, at medium speed, until thick and smooth

Return to ice cube trays, freeze again until firm about 30 minutesMakes 6 to 8 servings

4 cups cranberries

2-1/2 cups water

2 cups sugar

Juice 2 lemons

1 tsp gelatin dissolved in 1/2 cup cold water



Cook cranberries with water until berries stop popping

Strain, add sugar

And cook until dissolved

Add gelatin, cool, stir in strained lemon juice

Pour into tray of freezer stirring occasionally

Allow 2 to 3 hours

Makes 6 portions

Cranberry Vinegar




3/4 cup vinegar

3/4 cup water

3/4 cup sugar

1 cinnamon sticks (4 inches)

1 pkg (12 oz) fresh or frozen cranberries



In a saucepan, bring all ingredients to a boil

Reduce heat and simmer for 5 minutes or until the cranberries burst

Cool

Strain through a fine sieve into bottles or jars

Seal tightly

Discard cranberries and cinnamon stick

Chill until ready to use in your favorite oil and vinegar salad dressing

Yield 1-1/2 cups

Baked Cranberry Pudding




2 cups fresh cranberries

2 cups sifted all purpose flour

1 cup sugar

2 tsp baking powder

1/4 tsp salt

1/2 tsp cinnamon

1 cup milk

1 tbsp butter or margarine, melted

1 tsp grated orange peel

Cinnamon Sauce



Preheat oven to 375F

Lightly grease a 9x9x1-3/4 inch baking pan

Wash and drain cranberries, removing any stems

Cut in half

Into large bowl, sift flour with sugar, baking powder, salt and cinnamon

Add milk and butter, stir until smooth

Gently fold cranberries and orange peel into batter

Turn into prepared pan

Bake 30 to 35 minutes, or until surface springs back when gently pressed with finger

Cut into squares

Serve hot with Cinnamon Sauce

Makes 9 servings



Cinnamon Sauce

1 cup sugar

2 tbsp cornstarch

Dash salt

2 cups boiling water

1/4 cup butter or margarine

1-1/4 tsp cinnamon

1/2 tsp grated lemon peel

2 tsp lemon juice



In a 1-1/2 quart saucepan, mix sugar with cornstarch and salt

Gradually stir in boiling water

Bring mixture to boiling, stirring constantly, let boil 5 minutes

Remove from heat.

Stir in rest of ingredients

Serve hot, over Baked Cranberry Pudding

Makes about 2-1/3 cups

Cranberry Eggnog Pudding




1 pkg (3-3/4oz) instant vanilla pudding mix

2 cups dairy eggnog

1/2 cup heavy cream, whipped



Cranberry Topping



1 cup sugar

2 cups fresh cranberries



Prepare pudding as package label directs, but substitute 2 cups eggnog for milk

Gently fold in whipped cream until well blended

Pour into 6 sherbet glasses, leaving room for topping

Refrigerate



Make Cranberry Topping

Combine sugar with 1 cup water in medium saucepan, heat

Stirring, until sugar is dissolved

Bring to boiling, boil, uncovered, 10 minutes, or until mixture becomes syrupy, falling from side of spoon in heavy drops

Wash cranberries, drain, remove stems

Add to sugar syrup cook until cranberries begin to pop about 5 minutes

Cool, refrigerate until well chilled

At serving time, spoon over pudding

Makes 6 servings

Cranberry Pudding (Steamed)




2 cups fresh cranberries

1/2 cup diced citron

1/2 cup chopped walnuts

1/2 cup dark molasses

1-1/2 cups sifted all purpose flour

1/2 tsp salt

1-1/2 tsp baking soda



Thoroughly oil 1 quart mold

Wash cranberries, removing stems, chop coarsely

Combine cranberries, citron, walnuts, and molasses in medium bowl

Sift flour with salt over cranberry mixture



Dissolve baking soda in 2 tbsp cold water

Add to cranberry mixture, stir until thoroughly combined

Turn into prepared mold, cover tightly with foil or tight fitting cover

Place on trivet in deep kettle

Add enough boiling water to come halfway up side of mold

Simmer, with kettle covered, 4 hours

Remove mold from kettle

Let stand several minutes, and then gently remove pudding from mold

Serve warm with Vanilla Sauce

Makes 6 to 8 servings



Vanilla Sauce



1/2 cup butter or margarine

1 cup sugar

1/2 cup light cream

1 tsp vanilla extract



Melt butter in medium saucepan

Remove from heat; add remaining ingredients, mixing well

Simmer, stirring, over low heat, about 5 minutes, or until sugar is dissolved and sauce is heated

Serve hot over Steamed Cranberry Pudding

Makes about 1-1/2 cups

1 cup boiling water

1 can (20Oz) crushed pineapple, undrained

1 can (16oz) whole berry cranberry sauce

3 tbsp lemon juice

1 tsp grated lemon peel

1/2 tsp ground nutmeg

2 cups (16oz) sour cream

1/2 cup chopped pecans



In a large bowl, dissolve gelatin in boiling water

Drain pineapple, reserving the juice

Set pineapple aside

Add juice to gelatin

Stir in cranberry sauce, lemon juice, peel and nutmeg

Chill until mixture begins to thicken

Fold in sour cream, pineapple and pecans



Pour into a glass serving bowl or a 9 cup mold that has been coated with nonstick cooking spray

Chill for 2 hours or until set

Yield 16 to 20 servings

Cranberry-Banana Mold




1 (3oz) pkg raspberry flavored gelatin

1 cup boiling water

1 (16 oz) can whole cranberry sauce

2 bananas, sliced

1/2 cup chopped pecans



Dissolve gelatin in water. Add Cranberry sauce and stir until blended

Chill until partially thickened

Add sliced bananas and pecans

Spoon into molds

Chill until firm

Serve on greens

Makes 6 to 9 servings

Cranberry Fluff Mold


2 tbsp plain gelatin combined with

1/2 cup cold water allowed to stand until thick, then dissolved over simmering water

One 1-lb can whole cranberry sauce beaten well with a spoon

1/2 cup granulated sugar

1/2 tsp salt

1/4 cup lemon juice

1 cup canned cranberry juice cocktail

About 1/4 tsp red food coloring

1 pint (2 cups) whipping cream beaten until it clings to bowl (do not beat further) and refrigerate.



Add dissolved gelatin to cranberry sauce

Then add sugar, salt, lemon juice, and cranberry juice cocktail a little at a time, to form a smooth mixture

Add red coloring

Beat well about 1 minute

Place bowl in refrigerator or a pan of ice water until mixture is of medium consistency, like a soft custard, not too firm

When cranberry mixture looks like soft custard, beat it with electric mixer about 2 minutes

Now add whipped cream, and fold over and over until no streaks appear

Pour into a well oiled 1-1/2 quart mold and spread evenly

Refrigerate at least 8 hours

To serve, loosen around edges and brush top with cold water

Brush a platter with cold water, and invert mold on platter

Garnish base of mold with lemon leaves or fresh or canned fruits, relishes

Cranberry Mold Magnificent




1 (3-oz) pkg cherry flavored gelatin

1 cup boiling water

2/3 cup cold water

1 (10-oz) pkg, frozen cranberry-orange relish, thawed

1 envelope unflavored gelatin

1 cup Pure Orange Juice

1 cup Miracle Whip Salad Dressing

1 cup heavy cream, whipped



Dissolve cherry gelatin in boiling water; add cold water

Chill until partially set

Stir in cranberry relish

Pour into oiled 2 quart mold; chill until almost set



Soften unflavored gelatin in orange juice; stir over low heat until dissolved

Cool

Gradually add to salad dressing, mixing until blended

Fold in whipped cream

Pour over molded layer.

Chill until firm

Unmold

Garnish as desired

Cranberry-Banana Mold Salad



1 (3oz) pkg raspberry-flavored gelatin

1 cup boiling water

1 (16oz) can whole cranberry sauce

2 bananas sliced

1/2 cup chopped pecans



Dissolve gelatin in water.

Add cranberry sauce and stir until blended.

Chill until partially thickened.

Add sliced bananas and pecans

Spoon into molds chill until firm

Serve on greens

Makes 6 to 9 servings

Quick Cranberry Salad


1 envelope gelatin

1/2 cup chopped celery

1 1/4 cups cold water

1 cup sugar

2 cups cranberries

1/4 cup chopped nuts

1/2 teaspoon salt

Cook the washed cranberries in one cup of the water for twenty minutes. Stir in the sugar and cook five minutes longer. Soften the gelatin in one-fourth cup of water, add to the hot cranberries and stir until the gelatin is dissolved. Strain and cool. When the mixture begins to thicken add the celery, nuts and salt, mix with a fork. Return to the refrigerator to become firm. This makes six individual salads, or one large one.

Fresh Cranberry Gelled Mold




4 cups (1lb) fresh cranberries

2 cups sugar

Dash Salt



Wash cranberries, drain and remove stems

Turn into 3-1/2 quart saucepan

Add 2 cups water bring to boiling point over high heat

Reduce heat, simmer, covered 20 minutes

Press cranberries and liquid through food mill or colander, then strain, to remove seeds

Bring cranberry puree to boiling point boil, uncovered, 3 minutes

Add sugar and salt, boil 2 minutes

Pour into a 3 cup mold

Refrigerate for 5 hours or until firm

To unmold, carefully loosen edge of mold with a sharp knife

Turn out onto serving dish

Makes 8 to 10 servings
