Banana Brunch Punch




6 medium ripe bananas

1 can (12 oz) frozen orange juice concentrate, thawed

1 can (6oz) frozen lemonade concentrate, thawed

3 cups warm water, divided

2 cups sugar, divided

1 can (46 oz) pineapple-juice

3 bottles (2 liters each) lemon-lime soda

Orange Slices, Optional



In a blender or food processor, blend bananas and concentrate until smooth.

Remove half of the mixture and set aside

Add 1-1/2 cups of water and 1 cup sugar to mixture in blender, blend until smooth

Place in a large freezer container

Repeat

Serve in a punch Bowl

Mock Champagne




1 quart cider, chilled

1/4 cup lemon juice

1 bottle (1 pint, 12 oz) club soda, chilled

8 strips lemon peel



Combine cider and lemon juice in medium bowl or quart measure

Half fill 8 (4oz) champagne glasses, then fill with club soda

Add lemon peel to each

Makes 16 servings

Christmastide Fruit Punch


2 cups (1 pint) cranberry-juice cocktail

2 cups Pineapple juice (sweetened or unsweetened)

1, 6oz can frozen lemonade

1, 6 oz can frozen orange juice

1, 10 oz package frozen raspberries or strawberries

1 large attractive fresh lime cut into halves lengthwise, then into thin slices

1 quart ginger ale

about 30 ice cubes



Combine all ingredients except ginger ale and ice cubes in a punch bowl or other container, and refrigerate until serving time.

Then add ginger ale and ice cubes

Stir well until ice cubes are half melted, and serve as a punch or fruit-juice cocktail

This is a delicious and colorful nonalcoholic fruit punch and may be served during the holidays for cocktail, snack and buffet parties

Christmas Fruit Tea




1 gallon unsweetened tea

1 (46oz) can unsweetened pineapple juice

1/2 gallon lemonade

1/2 gallon orange juice

1/2 gallon apple juice

1/2 gallon cranberry juice cocktail

2 cups sugar

1 (6oz) pkg mulling spices

1 (2 liter) bottle ginger ale



Stir together first 8 ingredients in a 5 gallon container

Chill 30 minutes.

Stir in ginger ale just before serving

Hot Cider Punch


1 (64-oz) bottle apple cider

2 cups orange juice

3/4 cup fresh lemon juice

1/4 cup honey

10 whole allspice

5 whole cloves

1 (2-1/2 inch) cinnamon stick

Garnish lemon and apple slices, cloves



Bring first 7 ingredients to a boil in a Dutch oven, cover, reduce heat, and simmer 1 hour. Pour mixture through a wire-mesh strainer into a container, discard spices.

Garnish, if desired.

Serve Warm

Coffee Stir Sticks

Each year I make gift baskets for my friends & family. I always include these stir sticks along with some flavorful coffee beans.

1 c. sugar
1/3 c. brewed coffee
1 T. corn syrup
¼ t. baking cocoa
¼ t. cinnamon

½ t. vanilla extract
12 wooden craft sticks
cellophane
ribbon

In a large saucepan, combine sugar, coffee, corn syrup, cocoa and cinnamon. Cook over medium heat until the sugar dissolves, stirring constantly. Continue to cook over medium heat, without stirring until a candy thermometer reaches 290 degrees for about 7 minutes.

Remove from heat and add vanilla: stir well. Pour into greased 2-cup glass measuring cup. Working quickly, pour tablespoonfuls into circles on a greased baking sheet and lay a stick in each circle. Allow to cool at room temperature until hardened. When cooled, wrap with cellophane and tie with ribbon. Store in an airtight container. Makes one dozen stir sticks.

Coffee Nog




1/2 cup whipping cream

1/4 cup sifted powdered sugar

1/2 tsp vanilla

6 beaten eggs

3 cups milk

1/3 cup sugar

2 to 3 tsp instant coffee crystals

2 to 4 tbsp coffee liqueur

2 to 4 tbsp light rum

1 tsp vanilla instant coffee crystals (optional)



Beat whipping cream, powdered sugar, and 1/2 tsp vanilla in small mixer bowl till soft peaks form set aside



Combine the beaten eggs, milk, sugar, and coffee crystals in large, heavy saucepan

Cook and stir over medium heat till mixture just coats a metal spoon

Remove from heat

Immediately stir in coffee liqueur, rum and 1 tsp vanilla

Pour into 8 oz cups, dollop with whipped cream

Sprinkle with coffee crystals, if desired

Makes 6 (8oz) servings

Coffee Apple Spice Up



1 quart (4 cups) apple juice

1/2 cup firmly packed brown sugar

1/4 cup instant coffee

1- 2-inch cinnamon stick

1/2 tsp whole allspice

1/2 tsp whole clove

Dash ground nutmeg

Clove Studded orange wedge (optional for garnish)



In large saucepan, combine apple juice, brown sugar, instant coffee, cinnamon stick, allspice, cloves and nutmeg

Bring to a boil, stirring constantly

Cover and simmer for 20 minutes

Strain mixture

Pour into heat-proof mugs

Garnish with clove studded orange wedges if desired

Makes four 8-oz servings

Cinnamon Chocolate Coffee

2 oz (2 squares) unsweetened chocolate

1 cup double strength freshly made coffee

3 tablespoons sugar

1/8 teaspoon salt

3 cups milk

Cracked ice

Powdered Cinnamon



Melt chocolate in coffee in top of double boiler. Add sugar and salt. Keep over hot water, Add milk gradually and stir to blend

Chill and pour over cracked ice in tall glasses Sprinkle generously with powdered Cinnamon Serves 4

Cappuccino Punch

1/2 cup sugar

1/4 cup instant coffee granules

1 cup boiling water

2 quarts milk

1 quart vanilla ice cream, softened

1 quart chocolate ice cream, softened



In small bowl, combine sugar and coffee.

stir in boiling water until dissoved.

Cover and refrigerate until chilled.

Just before serving,,

pour coffee mixture into a 1 gallon punch bowl.

Stir in milk.

Add scoops of ice cream.

Stir until melted.



Makes about 1 gallon

Cafe Royal




2 squares (1 ounces each) semisweet chocolate, coarsely chopped

1/2 cup sugar

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

4 cups water

1 tablespoon instant coffee

1 cup pet Evaporated Milk

1/2 teaspoon vanilla extract



Combine chocolate, sugar, cinnamon, nutmeg and water in medium size pot. Stir frequently until chocolate melts and water is boiling. Add coffee granules, stirring until dissolved. Gradually stir in evaporated milk. Stir in vanilla. Pour into mugs and top with whipped cream and sprinkle with cinnamon

Yields 5 1/2 cups

Creamy Coffee Punch




1 quart strong coffee

1 quart cold milk

1 cup sugar

1 tablespoon vanilla

2 quarts vanilla ice cream



Combine coffee, cold milk and vanill.

Add sugar and stir to dissolve.

Chill thoroughly.

Pour over ice cream in punch bowl

1/4 cup sugar

dash of salt

2 one-ounce squares unsweetened chocolate

1 cup water

3 cups milk



Combine coffee, sugar, salt, chocolate and water in saucepan

Stir over low heat until chocolate melts, then add milk gradually

When hot (not boiling) remove from heat and beat until frothy.

Pour into cups and top with tablespoon of unsweetened cream

Makes 6 servings

Cherry Cordial Hot Chocolate




5-1/2 cups milk

1-1/2 cups half and half

1-1/2 cups chocolate syrup

1/2 cup maraschino cherry juice, divided

1-3/4 cups whipping cream

1 tbsp powdered sugar

Chocolate shavings (optional)

Maraschino cherries with stems (optional)

Splash of Cherry Brandy (adults only)



Heat first 3 ingredients and 7 tbsp cherry juice in a dutch oven over medium low heat, stirring often.



Beat whipping cream at medium speed until foamy, gradually add powdered sugar and reserved cherry juice, beating until soft peaks form. Serve with hot chocolate, top each serving with chocolate shavings and a cherry if desired.

Spiced Hot Chocolate




6 cups milk

1/2 cup sugar

1/4 cup cocoa

2 pinches ground cayenne pepper

1/8 tsp ground black pepper

1 tsp gorund cloves

1 tsp cinnamon



Heat the milk over low heat

Add the sugar and stir until completely dissolved

Add the cocoa and spices, stirring constantly

Simmer for 10 to 15 minutes

Serve topped with whipped cream and garnish with a fresh mint leaf.

2 tbsp granulated sugar

2 tbsp water

1 tbsp malted milk powder

1 egg

milk



Mix the baking chocolate, broken into small pieces, sugar and water together, and cook in top of double boiler over simmering water till baking chocolate is melted

Add the malted milk powder and the egg

And beat till light and frothy

Pour over crushed ice in a glass and fill with milk

Beat a moment before serving

Makes 1- 8oz serving

Spanish Chocolate


4 hersheys milk chocolate bars (1/05 ounces each)

2 c light cream

1/4 c clear black coffee

Whipped Cream



Melt the milk chocolate bars in the cream over low heat, stirring constantly

Stir in the coffee, and beat till a heavy froth

Serve hot with a dab of whipped cream or pour over crushed ice and top with whipped cream

Hot Buttered Cranberry Punch




1 cup water

3/4 cup light brown sugar, firmly packed

1/4 teaspoon nutmeg

1/2 stick cinnamon

1/4 teaspoon mace

3 whole cloves

1/4 teaspoon salt

2 cans (1 pound) jellied cranberry sauce

3 cups water

2 cups pineapple juice

2 cups orange juice

thin lemon slices

cinnamon sticks to use as stirrers



Mix sugar and add 1 cup water with spices which have been placed in small cloth bag

Add salt and bring to boil

Add 3 cups water to cranberry sauce and blend until smooth.

add Cranberry liquid, pineapple juice and orange juice to hot spiced syrup

Heat and serve

Dot with butter and garnish with thin lemon slices

Serve with cinnamon stick stirrers

Serves 10

Hot Cranberry Tea




3 cups cranberries

3-1/2 quarts water

12 whole cloves

4 cinnamon sticks

Juice of 2 Lemons

Juice of 2 Oranges

2 cups sugar



In a large enamel or stainless steel kettle, combine the cranberries, water, cloves, and cinnamon; bring to a boil.

Cover, reduce heat, and simmer 12 minutes. Strain through several thicknesses of cheesecloth, squeezing gently. Return to the kettle. Add the lemon juice, orange juice, and sugar, stir until the sugar dissolves.

Serve hot

Hot Cranberry Punch




1 lb fresh cranberries

2 quarts water

2 tbsp grated orange peel

6 cinnamon sticks

12 whole cloves

4 cups orange juice

1 cup lemon juice

1-1/2 cups sugar



Combine cranberries, water, orang epeel, cinnamon sticks and cloves in large saucepan

Cook until cranberries are soft

Strain

Add orange juice, lemon juice and sugar to strained mixture, heat over medium heat until sugar is dissolved

More intense color add a few drops of red food coloring

Makes 16 to 20 punch cups

Coffee EggNog




2 eggs, separated

1/3 cup sugar

1/3 cup instant coffee

Dash salt

1 tsp vanilla extract

2 cups milk, chilled

1 cup heavy cream, whipped

Shaved unsweetened chocolate



In small bowl of electric mixer, at high speed, beat egg whites until soft peaks form

Gradually beat in sugar until stiff peaks form

In large bowl, beat egg yolks until lemon colored

Gradually beat in coffee, salt, vanilla, milk, and 3/4 cup water

Stir in egg white mixture and whipped cream, mix well

Serve well chilled, with chocolate sprinkled over each serving

Makes 12 servings
