| Coffee Stir Sticks | Gail Prather Bethel, MN | Each year I make gift baskets for my friends & family. I always include these stir sticks along with some flavorful coffee beans. | 1 c. sugar 1/3 c. brewed coffee 1 T. corn syrup ¼ t. baking cocoa ¼ t. cinnamon | ½ t. vanilla extract 12 wooden craft sticks cellophane ribbon | In a large saucepan, combine sugar, coffee, corn syrup, cocoa and cinnamon. Cook over medium heat until the sugar dissolves, stirring constantly. Continue to cook over medium heat, without stirring until a candy thermometer reaches 290 degrees for about 7 minutes.
Remove from heat and add vanilla: stir well. Pour into greased 2-cup glass measuring cup. Working quickly, pour tablespoonfuls into circles on a greased baking sheet and lay a stick in each circle. Allow to cool at room temperature until hardened. When cooled, wrap with cellophane and tie with ribbon. Store in an airtight container. Makes one dozen stir sticks. |

| Coffee Nog 1/2 cup whipping cream1/4 cup sifted powdered sugar1/2 tsp vanilla6 beaten eggs3 cups milk1/3 cup sugar2 to 3 tsp instant coffee crystals2 to 4 tbsp coffee liqueur2 to 4 tbsp light rum1 tsp vanilla instant coffee crystals (optional) Beat whipping cream, powdered sugar, and 1/2 tsp vanilla in small mixer bowl till soft peaks form set aside Combine the beaten eggs, milk, sugar, and coffee crystals in large, heavy saucepanCook and stir over medium heat till mixture just coats a metal spoonRemove from heatImmediately stir in coffee liqueur, rum and 1 tsp vanillaPour into 8 oz cups, dollop with whipped creamSprinkle with coffee crystals, if desiredMakes 6 (8oz) servings | |

| Coffee Apple Spice Up
1 quart (4 cups) apple juice
1/2 cup firmly packed brown sugar
1/4 cup instant coffee
1- 2-inch cinnamon stick
1/2 tsp whole allspice
1/2 tsp whole clove
Dash ground nutmeg
Clove Studded orange wedge (optional for garnish)
In large saucepan, combine apple juice, brown sugar, instant coffee, cinnamon stick, allspice, cloves and nutmeg
Bring to a boil, stirring constantly
Cover and simmer for 20 minutes
Strain mixture
Pour into heat-proof mugs
Garnish with clove studded orange wedges if desired
Makes four 8-oz servings | |

| Cinnamon Chocolate Coffee
2 oz (2 squares) unsweetened chocolate
1 cup double strength freshly made coffee
3 tablespoons sugar
1/8 teaspoon salt
3 cups milk
Cracked ice
Powdered Cinnamon
Melt chocolate in coffee in top of double boiler. Add sugar and salt. Keep over hot water, Add milk gradually and stir to blend
Chill and pour over cracked ice in tall glasses Sprinkle generously with powdered Cinnamon Serves 4 | |

| Cappuccino Punch
1/2 cup sugar
1/4 cup instant coffee granules
1 cup boiling water
2 quarts milk
1 quart vanilla ice cream, softened
1 quart chocolate ice cream, softened
In small bowl, combine sugar and coffee.
stir in boiling water until dissoved.
Cover and refrigerate until chilled.
Just before serving,,
pour coffee mixture into a 1 gallon punch bowl.
Stir in milk.
Add scoops of ice cream.
Stir until melted.
Makes about 1 gallon | |
