Soy Sauce

is made from soybeans, salt, yeast, wheat, and sugar. Used primarily as a seasoning in Oriental cooking, soy sauce has been adopted by Western cooks increasingly in the last few decades. It is particularly good for marinating meats, since it tenderizes them, and it adds flavor and color to sauces. It is apt to be salty so be careful about adding salt when using it.
