Gooey Butter Cake




Crust

1 cup all purpose flour

3 tbsp granulated sugar

1/3 cup butter, softened



Filling

1-1/4 cups granulated sugar

3/4 cup (1-1/2 sticks) butter, softened

1 egg

1 cup all purpose flour

2/3 cup evaporated milk

1/4 cup light corn syrup

1 tsp vanilla

Confectioner’s sugar



Heat oven to 350

Coat 9x9x2 inch square baking pan with non stick cooking spray



Crust

Combine flour and sugar in medium size bowl.

With pastry blender, cut in butter until mixture resembles fine crumbs and starts to cling together.

Pat over bottom and up sides of prepared baking pan



Filling

Beat together sugar and butter in medium size bowl in electric mixer on medium speed until light and fluffy

Beat in egg

on low speed, beat in flour alternately with evaporated milk, beginning and ending with flour

Beat in corn syrup and vanilla

Pour batter into crust-lined baking pan

Bake in 350 oven for 25 to 30 minutes or until cake is nearly set do not over cook

Let cool in pan on wire rack

To serve, sprinkle top with a light dusting of confectioner’s sugar

Makes 9 servings
