| Wedding Ring Cookies 1 c butter1-3/4 c sifted flour1-1/2 tsp grated lemon peel (optional)1 tbsp light cream or half-and-half1 tbsp water1 egg white, lightly beaten1/2 c coarsely chopped blanched almonds1/3 c yellow sugarSilver dragees Blend butter and flour with pastry blender until mixture is crumblyAdd lemon peel, cream and water; mix with hands to form a stiff doughShape in ball and refrigerate to chill thoroughlyDivide dough in halfKeep one half in refrigerators while working with other halfRoll dough on lightly floured surface to 1/4" thicknessCut out rings with doughnut cutterBrush one side of rings with egg whiteDip this side of cookie in almondsPress almonds lightly so they will adhereSprinkle with yellow sugarRepeat with remaining half of doughTo make double rings, cut one ring and link it through another ring on light greased baking sheetDecorate one of the rings with silver drageesBake 6 double rings at a time in hot oven 425F for 8 minutesRemove from oven and let cookies coolMakes 18 to 19 double ringsGold and silver cookies ideal for bridal showers, anniversaries | |
