Wedding Ring Cookies


1 c butter

1-3/4 c sifted flour

1-1/2 tsp grated lemon peel (optional)

1 tbsp light cream or half-and-half

1 tbsp water

1 egg white, lightly beaten

1/2 c coarsely chopped blanched almonds

1/3 c yellow sugar

Silver dragees



Blend butter and flour with pastry blender until mixture is crumbly

Add lemon peel, cream and water; mix with hands to form a stiff dough

Shape in ball and refrigerate to chill thoroughly

Divide dough in half

Keep one half in refrigerators while working with other half

Roll dough on lightly floured surface to 1/4" thickness

Cut out rings with doughnut cutter

Brush one side of rings with egg white

Dip this side of cookie in almonds

Press almonds lightly so they will adhere

Sprinkle with yellow sugar

Repeat with remaining half of dough

To make double rings, cut one ring and link it through another ring on light greased baking sheet

Decorate one of the rings with silver dragees

Bake 6 double rings at a time in hot oven 425F for 8 minutes

Remove from oven and let cookies cool

Makes 18 to 19 double rings

Gold and silver cookies ideal for bridal showers, anniversaries
