Double Chocolate Impossible Pie




1 can (5 oz) evaporated milk

3/4 cup sugar

1/4 cup buttermilk baking mix

1/2 cup unsweetened cocoa powder

1 cup egg substitute or 4 eggs

1 tsp almond or vanilla extract



Topping

1/2 cup semisweet chocolate

1 container (12 oz) frozen, low-fat, nondairy whipped topping, Thawed



Heat oven to 350

Grease an 8 inch pie pan



Place milk, sugar, baking mix, cocoa, eggs and extract in a blender and blend for 3 minutes

Pour into prepared pie pan



Bake in 350 oven for 28 to 30 minutes until firm on sides. Cool



Topping

Melt chocolate in a small bowl in microwave, transfer to a large mixing bowl and let cool

Using a spatula, stir and fold in whipped topping

1 cup at a time, mixing thoroughly after each addition

Fill crust, chill at least 4 hours or overnight

Makes 8 servings
