| Double Chocolate Impossible Pie 1 can (5 oz) evaporated milk3/4 cup sugar1/4 cup buttermilk baking mix1/2 cup unsweetened cocoa powder1 cup egg substitute or 4 eggs1 tsp almond or vanilla extract Topping1/2 cup semisweet chocolate1 container (12 oz) frozen, low-fat, nondairy whipped topping, Thawed Heat oven to 350 Grease an 8 inch pie pan Place milk, sugar, baking mix, cocoa, eggs and extract in a blender and blend for 3 minutesPour into prepared pie pan Bake in 350 oven for 28 to 30 minutes until firm on sides. Cool ToppingMelt chocolate in a small bowl in microwave, transfer to a large mixing bowl and let coolUsing a spatula, stir and fold in whipped topping1 cup at a time, mixing thoroughly after each additionFill crust, chill at least 4 hours or overnightMakes 8 servings | |
