| Chocolate Cream Pie 2-1/2 c milk3 sq Hershey’s baking chocolate melted2 tbsp flour3 tbsp cornstarch1 cup granulated sugar1/2 tsp salt4 egg yolk, slightly beaten2 tbsp butter1-1/2 tsp vanilla9 inch pie shell4 egg whites1/2 tsp cream of tartar1/2 c granulated sugar Scald 2 c milk with melted baking chocolate in top of double boiler over simmering water, stirring until smoothSift flour, cornstarch, 1 c sugar and salt twiceMix with remaining 1/2 c milkAdd to chocolate mixture, stirring constantly, until thickenedCook 10 minutesRemove from fireGradually add some of the chocolate mixture to beaten egg yolks and return to double boilerCook 2 minutes more, stirring occasionallyRemove from fire, add butter and vanillaPour into baked pie shellCover with meringue made by beating egg whites with cream of tartar until frothyGradually add 1/2 c sugar a tbsp at a timeBeating until stiffBrown in hot 425F for about 5 minutesCool to room temperature Chill serve cold | |
