| Summer Garden Pie 1 unbaked Pie Crust2 tablespoons olive oil1 yellow onion, chopped fine3 to 4 cloves garlic, minced1/2 cup chopped sweet red bell pepper1 cup sliced mushrooms2 cups chopped fresh spinach, well rinsedSalt and fresh coarse-ground black pepper, to taste2 cups half-and-half4 eggs, well-beaten1/2 cup grated cheddar cheese1/2 cup grated mozzarella cheese Preheat oven to 350 Heat olive oil in a heavy skillet and gently sauté the onion and garlic until the onion is pinkish but not yet beginning to turn brown.Add the pepper and continue to sauté until hot through.Add the mushrooms and sauté until they become translucentAdd the spinach, cover with a tight-fitting lid and cook until the spinach is wilted.Remove from the heat and allow to coolSeason with salt and pepper.Beat the eggs with the half-and-half. Mix the grated cheese together and sprinkle about 1/3 over the bottom of the pie crust.When cooled, place half the sautéed vegetables in the pie pan over the cheese and spread evenlySprinkle another 1/3 of the cheese over the vegetables.Top the cheese with the remaining sautéed vegetables Place the pie dish inside another larger oven proof baking dish and set on the middle rack of the ovenGently pour the half and half and egg mixture into the pie pan until it is quite fullSprinkle the remaining cheese over the top of the piePour hot water into the larger baking dish to 3/4 to 1 inch depthBake until the knife inserted in the center comes out cleanAbout 1 hour Serves 6 | |
