Summer Garden Pie




1 unbaked Pie Crust

2 tablespoons olive oil

1 yellow onion, chopped fine

3 to 4 cloves garlic, minced

1/2 cup chopped sweet red bell pepper

1 cup sliced mushrooms

2 cups chopped fresh spinach, well rinsed

Salt and fresh coarse-ground black pepper, to taste

2 cups half-and-half

4 eggs, well-beaten

1/2 cup grated cheddar cheese

1/2 cup grated mozzarella cheese





Preheat oven to 350



Heat olive oil in a heavy skillet and gently sauté the onion and garlic until the onion is pinkish but not yet beginning to turn brown.

Add the pepper and continue to sauté until hot through.

Add the mushrooms and sauté until they become translucent

Add the spinach, cover with a tight-fitting lid and cook until the spinach is wilted.

Remove from the heat and allow to cool

Season with salt and pepper.

Beat the eggs with the half-and-half. Mix the grated cheese together and sprinkle about 1/3 over the bottom of the pie crust.

When cooled, place half the sautéed vegetables in the pie pan over the cheese and spread evenly

Sprinkle another 1/3 of the cheese over the vegetables.

Top the cheese with the remaining sautéed vegetables



Place the pie dish inside another larger oven proof baking dish and set on the middle rack of the oven

Gently pour the half and half and egg mixture into the pie pan until it is quite full

Sprinkle the remaining cheese over the top of the pie

Pour hot water into the larger baking dish to 3/4 to 1 inch depth

Bake until the knife inserted in the center comes out clean

About 1 hour
