| Spanish Dressing To 1/2 cup French dressing (below)Add 2 teaspoons minced Spanish onion2 teaspoons chili sauce2 teaspoons chopped pimiento2 teaspoons chopped watercress French Dressing 2 tsp salt1 tsp white pepper1/2 tsp dry mustard1/2-2 tsp sugar1 tsp paprikaFew grains cayenne pepper1/4-13 cup lemon juice or vinegar1 cup salad oil Combine dry ingredients, add vinegar and mix wellAdd oil, drop by drop, and beat 25 times with electric mixerOr put all in a tightly stoppered bottle and shake well before servingChill well before servingIf the first method is used the dressing will not separate for several days if kept coldUse as a dressing for greens and fruit salad and as a marinade To marinate, toss the ingredients lightly in French dressing and let stand 1/2 - 1 hour in cold placeVegetables toughen when marinated so they should not be allowed to stand but a few minutes | |

| "Not on the First Date" Red Onion/Shallot Dressing 1/2 C olive oil 1/4 C red wine vinegar 1 medium shallot, minced, or 2 T red onion, minced 1/4 tsp garlic powder 1/4 tsp basil 1/4 tsp McCormick's Spicy blend, or other general purpose spice blend 1/4 tsp black pepper 1/4 tsp Jane's Krazy Mixed Up Salt Combine in blender at top speed for about a minute, so that all of the onion or shallot is reduced. The result should be a creamy pink dressing. Chill overnight in refrigerator. The result is a mild, oniony dressing with a slightly sweet edge. | |

| Thousand Island Dressing 2 cups oil3 egg yolks1/2 cup vinegar1/2 bottle Chile sauce1 bunch chives or onions3 hard boiled eggs2 pimentos1/2 green pepper1/4 teaspoon paprika1/2 teaspoon salt Mix oil, yolks of eggs and vinegarAdd slowly Chile sauce until well mixedThen chop together (very fine) chives or onions, hard boiled eggs, pimentos and green pepper, Add salt and paprikaCan use onions in place of chivesMore pimentos and green pepper, also Few olives and a little Worcestershire sauceCan omit boiled eggsThis will make about 1 quart dressing | |
