| Baked Onion Casserole Boiling Water1/2 tsp salt1 lb small white onions, peeled1 pkg (10 oz) frozen peas3 tbsp chopped pimiento1 can (10-1/2 oz) condensed cream of mushroom soup, undiluted1/2 cup grated sharp cheddar cheese1/2 cup soft white bread crumbs Lightly grease a 1-1/2 quart casseroleIn medium saucepan, in 1 inch boiling salted water, cook onions, covered 25 minutes or until just tenderDrain onions, reserving liquidPlace onions in casserole Meanwhile, preheat oven to 350F Pour boiling water over peas to thaw them, drain wellSprinkle peas over onions in casserole Combine mushroom soup with 1/4 cup reserved onion liquid, mix wellAdd 2 tbsp pimiento, toss with vegetables in casserole Sprinkle top with cheese, rest of pimiento, and bread crumbs Bake uncovered, until hot and bubbly, about 25 minutes Makes 6 servings | |
