| Butternut Squash Soup 6 cups (about 3 lbs) butternut squash1 tart green apple, peeled and coarsely chopped1 cup chopped onion4-1/2 cups chicken broth1 tsp salt1/4 tsp pepper1/4 cup heavy cream or half and halfChopped fresh parsley for garnish Peel squash and seed itCut into chunksCombine squash, apple, onion, chicken broth, salt and pepperBring to a boil and simmer, uncovered 45 minutes Puree soup in blenderReturn mixture to saucepan and bring to boiling pointReduce heatBefore serving, add cream and sprinkle with parsleyMakes 2 quarts | |
